Why You’ll Love Slow Cooker Chili Cheese Dip

  • Easy to Make: This recipe is relatively simple to prepare. It involves browning ground beef and onions, then combining them with canned beans, Rotel, and spices in a slow cooker. The slow cooker does most of the work, so it’s easy to assemble and enjoy when ready.
  • Versatile: This dip is versatile and can be served on various occasions. It’s perfect for game day gatherings, potlucks, parties, or a comforting snack or appetizer.
  • Slow Cooker Convenience: Using a slow cooker makes the cooking process hands-off and allows the flavors to meld together over time. It’s convenient for hosts as they can prepare the dip in advance and keep it warm throughout the party or get-together.
  • Cheesy and Creamy: The combination of ground beef, beans, and Velveeta cheese creates a creamy, cheesy, and indulgent dip that’s incredibly satisfying. The cheese melts to a smooth consistency, making it ideal for dipping chips.
  • Customizable Heat: You can adjust the level of spiciness to your liking by using mild or spicy Rotel and adding more or less chili powder or hot sauce. Having the ability to increase or decrease the spice level makes this perfect for everyone.
  • Crowd-Pleasing: The flavors in this dip make it a crowd-pleaser. It’s likely to disappear quickly at gatherings because it’s so tasty, and dipping is so much fun.
  • Pairing Options: This dip pairs well with various dippable items, including corn chips, tortilla chips, bread, or vegetable sticks. Whatever you choose to serve it with will impress everyone enjoying it.

    Variations and Substitutions

    • Meat Variations: You can easily substitute the ground beef in this recipe for alternatives like ground turkey or ground chicken. You can even use ground chorizo for a smokier flavor profile.
    • Cheese Options: While Velvetta is this recipe’s most commonly used cheese, you can experiment with other cheeses. Try using cheeses like cheddar, Monterey Jack, or a mixture of different cheeses.
    • Bean Choices: You can always add a six-bean medley or pinto beans to add a little variety to this recipe. Just make sure that you drain and rinse them before adding them to your slow cooker.
    • Spice Level: Adjust the spice level by increasing or decreasing the chili powder. You can also add hot sauce or sliced jalapenos to give it even more kick.

    Storage Instructions

Leftovers of this cheesy chili dip recipe are unlikely, given that it is delicious. However, if, for some reason, you do find yourself with some leftover crock pot chili cheese dip, you can store it in an airtight container. Wait for the dip to cool, transfer it to an airtight container, and place it in the fridge. It will last approximately 3-4 days when stored properly.

    Can I Freeze?

Yes. Place your cooled chili cheese dip in a freezer-safe container. Pop it in the freezer and enjoy it within three months.

    Recipe Tips and Tricks

    • Use Lean Meat: When using ground meat, opt for lean varieties to minimize excess grease and ensure a healthier dip. This will also prevent oil pooling at the top of your dip.
    • Sauté the Onions: Sautéing the onions before adding them to the slow cooker enhances their flavor. Cook them until they’re translucent and slightly caramelized before popping them into the slow cooker.
    • Drain and Rinse Beans: Drain and rinse the canned beans thoroughly. This removes excess salt and starch, improving the overall taste and texture of the dip. You will have an overly liquid dip if you don’t drain and rinse your beans.
    • Cheese Cubes: Cut the Velveeta cheese into small cubes to help it melt evenly and quickly in the slow cooker.
    • Stir Occasionally: While the slow cooker does most of the work, giving the dip an occasional stir is an excellent idea to ensure even cooking and cheese melting. You also want to ensure nothing is burning or crusting to the sides or bottom of your slow cooker.
    • Garnish Creatively: Get creative with garnishes. Chopped cilantro, diced tomatoes, green onions, bell peppers, jalapeño slices, or a dollop of sour cream can add a burst of freshness and color to your dip. Add these to the top of the dip once it has fully cooked and you are ready to serve it.
    • Keep it Warm: If you’re serving the dip at a party, you can keep it warm in the slow cooker in the “warm” setting. This ensures everyone gets a delicious, warm, and comforting cheesy dip.
    • Get Creative: You can serve this delicious dip on top of hot dogs to make a delicious chili cheese dog. While it is excellent when served as a dip, it is also fantastic as a topping.
    • Double the Recipe: If you’re hosting a large gathering, consider doubling the recipe to ensure enough for everyone. Just ensure your slow cooker is big enough to handle a double batch.
    • Cleanup Tip: Consider using slow cooker liners or a non-stick slow cooker insert to make cleanup easier. Once finished serving the dip, the liner makes cleanup an absolute breeze.

    Can I Use Canned Chili?

Yes. You can use canned or leftover chili you have made before for this homemade chili cheese dip. Just remember, it is harder to customize the flavor profile if you are using a can of chili. It is a good idea to try the canned chili before adding it to your slow cooker chili cheese dip recipe.

Can I Make Without a Crockpot?

Yes. You can make this easy recipe on the stovetop. Simply change the instructions a little, and you will still have an easy appetizer to enjoy.

    • Step One: In a large skillet or saucepan over medium-high heat, brown the ground beef and chopped onions. Break up the beef into small pieces while cooking. Drain any excess grease once the beef is browned and the onions are translucent.
    • Step Two: Return the skillet to the stovetop and reduce the heat to medium-low.
    • Step Three: Add the drained and rinsed kidney beans, drained and rinsed black beans, ROTEL (diced tomatoes and green chilies), and 1/2 cup of water to the skillet with the beef mixture.
    • Step Four: Sprinkle in the chili powder, oregano, garlic powder, ground cumin, salt, and pepper. Stir well to combine all the ingredients.
    • Step Five: Add the cubed Velveeta cheese to the skillet on top of the mixture.
    • Step Six: Continue to cook and stir over medium-low heat until the cheese is fully melted and all the ingredients are well combined, creating a smooth and creamy dip. This should take about 10-15 minutes.
    • Step Seven: Remove it from the heat once the dip is heated and the cheese is completely melted.
