The holiday countdown is on. Are you ready? I’ve finished up my Christmas shopping and am breathing a huge sigh of relief. My to-do list is shrinking thankfully. What’s left is to put the tree up (I need to stop procrastinating), wrap all the gifts and plan my holiday menu. I’m hoping to get everything accomplished by the end of the week. If all goes well, that is!
In 2014, we moved back to my hometown and I’m loving how nice it is to be close to my family and friends again. That means more holiday entertaining and I’m not complaining. I love to share delicious food with the people I love and make memories.
One recipe that is going on my holiday party menu is this Buffalo Chicken Dip. If you are a fan of Buffalo Wings, you are going to LOVE this recipe. I included all the ingredients you’d typically serve with Buffalo Wings and combined them into a mouthwatering dip. Each bite is a flavour explosion!
I used Buffalo Wing sauce (obviously), Ranch dressing, green onions, four types of cheese (cream cheese, Monterey Jack cheese, cheddar cheese and blue cheese) and the star of the recipe, chicken!

I picked up some Maple Lodge Farms Boneless, Skinless Chicken Breasts. They always make a high quality product and I’ve been using their Fresh from the Farm chicken for a while now. Their chicken is raised locally on Ontario family farms! I found them at Metro in my town.
I baked two chicken breasts specifically to use in this recipe, but you could also use leftover chicken. Maple Lodge Farms has other cuts of chicken that would work well in this recipe like Chicken Thighs or Chicken Drumsticks. We buy a lot of chicken breasts because it’s our family’s favourite and we eat them a few times a week! I always have some either in the fridge or freezer.
The first layer of the dip is cream cheese. I recommended using softened cream cheese and beating it with an electric mixer so that it’s easier to spread on the bottom of your casserole dish.
I shredded the cooked chicken with a fork, but you could cut it into cubes if you like. The chicken goes on top of the cream cheese layer followed by the Buffalo Wing sauce and Ranch dressing.
The last layer is all the cheese! I know that blue cheese is an acquired taste so if you aren’t a big fan, simply omit it. I don’t mind the taste when it’s mixed in a recipe.
Pop the casserole dish in the oven for 25 minutes so the heat can work it’s magic. The flavours will have a chance to combine and the cheese will get all nice and melty. I added fresh green onions just before serving to give the dip a pop of colour.
Serve with cut up celery sticks, carrots, baguette slices, crackers or corn chips. It pretty much goes with anything!
I’m sure your wondering how it tastes! It tastes just like Buffalo Wings minus the bones. The chicken is so tender and flavourful. It’s not too spicy because of the addition of Ranch dressing to tone it down a notch.
I recommend grabbing a big scoop, but no double dipping! I’ll hear about that if I attempt to double dip.
I was even tempted to get a spoon from the drawer and just eat it like that! Good thing the guests were gone or they may have looked at me funny.

Buffalo Chicken Dip
Ingredients
- 2 boneless skinless chicken breasts cooked and shredded
- 1 package cream cheese softened (8oz/250g package))
- ½ cup buffalo wing sauce
- ½ cup ranch dressing
- ¼ cup blue cheese crumbled
- 1 cup cheddar cheese shredded
- 1 cup Monterey Jack cheese shredded
- 3 green onions chopped, for garnish
Instructions
- Preheat oven to 350°F.
- Spread cream cheese in a 1.5 quart casserole dish. Top with chicken, Buffalo wing sauce and Ranch dressing. Top with cheddar cheese, Monterey Jack cheese and blue cheese.
- Bake for 25 minutes. Top with green onions. Serve hot with corn chips, baguette crisps, celery or carrots.

Can you put the leftovers in the fridge? How would you recommend heating it back up?

Yes, you can put them in the fridge. I heat mine up in the microwave for a couple minutes.
