    • 2 tbsp extra virgin olive oil
    • 1 medium yellow onion diced
    • 1 green pepper diced
    • 1 red pepper diced
    • 2 garlic cloves minced
    • 1 can fire roasted corn (14.5oz) drained
    • 1 can black beans (15oz) drained and rinsed
    • 1 can diced fire roasted tomatoes (14.5oz) do not drain
    • 1 can enchilada sauce (8oz)
    • 1 packet fajita seasoning
    • 8 cups chicken broth
    • Juice of half a lime
    • 2 green onions sliced for garnish

    Toppings

    • shredded cheese
    • sour cream
    • hot sauce
    • cilantro
    • lemon wedges

    Instructions
