How to Make Mini Pancakes

  • Step One: To make the batter, first make the ‘buttermilk’ by adding the apple cider vinegar to the milk and allowing it to set while you put together the rest of the batter, about 5 minutes.
  • Step Two: In a medium or large bowl, stir together the flour, sugar, and baking powder.
  • Step Three: Whisk in the melted butter, vanilla, milk, and vinegar mixture. Don’t overmix; just enough so there are no lumps.

  • Step Five: Drop about one tablespoon of the batter onto the pan, and add a few more drops (depending on the size of your pan), leaving about 2-3 inches between the mini pancakes.
  • Step Six: Once the pancakes bubble, flip and cook on the other side for about the same time or until golden.
  • Step Seven: Keep warm until all pancakes are made, and enjoy with your preferred toppings!

What to Serve with Mini Pancakes

Serve these Mini Pancakes alongside some of your favorite breakfast recipes.

    Variations and Substitutions

    • Flour Variations: If you want a healthier alternative, swap some or all of the all-purpose flour with whole wheat flour. Need a gluten-free version? You can easily use a gluten-free blend in place of regular flour.
    • Flavor Variations: Instead of using vanilla extract, use other flavored extracts. You can try using lemon, almond or orange extracts to change the flavor profile of the pancakes.
    • Add Mini Chocolate Chips: For a chocolatey fun flavor, sprinkle mini chocolate chips into the batter before you cook your pancakes.
    • Sugar Variations: You can swap the white sugar for light or dark brown sugar. This will add a whole other dimension of flavor and richness to your pancakes.
    • Butter Substitution: If you don’t want to use melted butter in your homemade pancakes, opt for the cooking oil of your choice. You can even use applesauce as a butter substitute. It doesn’t compromise the flavor or texture and will create delicious little pancakes.
    • Add Spices: For a fun twist on your pancake batter, add in a pinch of warm spices. Cinnamon, nutmeg, or even pumpkin spice can add a delicious flavor to your pancakes.

    Storage Instructions

If you are meal prepping or simply have leftover pancakes, you can easily store them to enjoy later. Place your cooled pancakes into an airtight container and place them in the fridge. They will stay delicious for 3-4 days after making them. Reheat them in the microwave or a hot pan when ready to enjoy them.

    Can I Freeze?

You can very easily freeze your pancakes. This is what makes them great for meal prep. Allow them to cool before placing them in an airtight container or zip-top freezer bag. Transfer them to the freezer and allow them to freeze. When you are ready to enjoy them, reheat them in the microwave.

    Recipe Tips and Tricks

    • Don’t Overmix: Overmixing your batter. Overmixing the batter for these pancakes will give your pancakes a tough texture. You will also risk removing any air bubbles that will help to create fluffy pancakes. Overmixing will make your pancakes turn out flat, and they will not cook evenly.
    • Let the Batter Sit: Allow your pancake batter to sit for at least 5 minutes after mixing. This will ensure the batter fully hydrates and thickens, allowing air bubbles to form. This will create a fluffy, airy texture to your pancakes.
    • Use a Pancake Mold: A pancake mold will help create perfectly round pancakes. Just make sure that you spray the inside of the mold and the pan with cooking spray so the pancakes don’t stick.
    • Avoid Flattening: You may be tempted to press down on the pancakes with your spatula while cooking. Resist that temptation. Let them rise naturally so they will maintain their fluffiness.

How Do I Make Perfectly Round Pancakes?

You will want to use a pancake mold to make your pancakes perfectly round. This is the best way to ensure that your pancakes are all an even size, with that perfect round shape.

How Many Mini Pancakes Make a Full Serving?

This is a bit of a tricky question. It truly depends on who you are serving and their age. One full serving for an adult would be about 7-10 mini pancakes, but even that varies.

Is it Better to Make Pancakes with Milk or Water?

Whether it’s better to make these mini pancakes with milk or water truly depends on your preferences. Milk will provide a richer and creamier flavor to your pancakes and a more tender texture. Using water will make them less rich and not quite as fluffy.

How to Know When to Flip Pancakes

To achieve perfectly cooked pancakes, it is critical to flip them at the right time. Wait until you see bubbles forming on the surface when cooking the first side. The edges will begin to set and become a golden brown color. Once this happens, your pancakes are ready to flip.

How to Stop Mini Pancakes from Burning

To ensure that you do not burn your mini pancakes, it’s important to ensure that you cook them over the correct heat. This entirely depends on your stove or griddle. Cooking your pancakes on medium heat is usually what is recommended. You will also want to ensure you use a nonstick surface and properly buttering or spray your pan with cooking spray.

How Do You Keep Mini Pancakes from Sticking to the Pan?

Use a nonstick pan to ensure that your mini pancakes do not stick to your pan. You also want to ensure you properly preheat your pan and add cooking spray, butter, or oil before making your pancakes. Ensure the pan retains an even heat balance while cooking, especially if you are cooking in batches. While you want your pancakes to have crispy edges, you don’t want them overcooked.

    Can I Make Ahead?

Absolutely. These miniature pancakes are perfect for meal prep. Simply make a big batch of these pancakes, allow them to cool, and store them using the storage mentioned above instructions.

    Can I Make Larger Pancakes?

Absolutely. If you want to make regular pancakes, adjust the amount of oil or butter you are using to add to the pan to ensure even cooking.

    How to Reheat from Frozen

Reheating these delicious pancakes is easy. Place them in the microwave until they are heated through, and enjoy.

Can I Reheat in the Toaster?

While regular-sized pancakes can be heated in the toaster, it is not recommended with mini pancakes. This is because they would be quite difficult to retrieve from the toaster once finished safely.

How to Keep Mini Pancakes Warm

Keeping your pancakes warm while cooking the others is important, especially if you are making a big batch. Place them on a baking sheet in a preheated oven set to a low temperature. This will keep them from getting cold before you are ready to serve them.

Are Mini Pancakes the Same as Pancake Cereal?

No. These Mini Pancakes are not the same as cereal pancakes. While this mini pancake recipe is smaller than regular-sized pancakes, the pancakes used for pancake cereal are much smaller.

2 tablespoons of baking powder??????? WWWAAAAYYYY TOO MUCH, is this a miss print????????

      1. No, that’s the correct amount. It makes them fluffier especially when combined with the apple cider vinegar.
