    Ingredients
     
     

    • 2 cups all-purpose flour
    • 3 tbsp granulated sugar
    • 2 tbsp baking powder
    • 1 ½ cups milk
    • 1 ½ tbsp apple cider vinegar
    • ¼ cup butter melted
    • 1 tsp vanilla extract
    • Butter, cooking spray or oil for cooking

    Instructions

    • The first step is to prepare the "buttermilk". Add the apple cider vinegar to the milk and stir. Let sit for about 5 to 10 minutes until it curdles.
    • In a large mixing bowl, stir together the all-purpose flour, sugar and baking powder.
    • Whisk in the melted butter, vanilla and "buttermilk". Don't overmix. Just mix enough so there are no lumps.
    • Heat the skillet over medium low heat on the stove. Add a little butter or oil to the pan.
    • Drop about 1 tablespoonful of the batter onto the pan. Add a few more drops (depending on the size of your pan), leaving about 2 to 3 inches between the mini pancakes.

      1. No, that’s the correct amount. It makes them fluffier especially when combined with the apple cider vinegar.
