    • Eggs: These emulsifiers hold all the ingredients in the batter together.
    • Pumpkin Puree: Use real pumpkin, not pumpkin pie filling. 
    • Milk: Use either whole milk or your favorite plain non-dairy milk alternative. 
    • Vanilla Extract: This makes the flavors richer and more well-rounded. 
    • Pumpkin Pie Spice: Use jarred spice mix or make your own. 
    • Sugar: I used granulated sugar, but you can use brown sugar instead. It will make the flavor deeper and taste more like caramel. 
    • Thick Bread: Use bread to hold up to the batter and flip. 
    • Syrup: This is optional.

    How to Make Air Fryer Pumpkin French Toast Sticks

    Follow along to learn how to make air fryer pumpkin French toast sticks.

    • Step One: In a shallow bowl, beat eggs, pumpkin, milk, vanilla, pumpkin pie spice, and sugar with a fork until well combined.

    • Step Two: Spray the air fryer basket with non-stick spray.  Place bread into the egg mixture batter, flipping twice to coat thoroughly.  Place into the basket and repeat with other pieces, leaving room in between.   Cook at 360℉ for 5 minutes, flip, then cook another 4-5 minutes.  Both sides should be golden brown.
    • Step Three: Repeat step 2 with the remaining bread, stirring the mixture before adding the bread.  Serve with syrup.  It’s also great with fruit.  Or try dusting with powdered sugar.
    • Step Four: Slice into sticks and serve.

    Variations and Substitutions

    • Topping. Dust them with cinnamon sugar instead of dipping them into syrup. 
    • Bake them in the oven. Place each piece of bread on a baking sheet and bake at 350℉, covered with foil, for about 30 minutes. 
    • Nut or Seed Butter. Top with peanut butter or your favorite kind of seed butter. 
    • Apple pie spice. If you don’t have pumpkin pie spice, use apple pie spice or make your own.

    Storage Instructions 

    Store leftover French Toast sticks in an airtight container and keep them in the refrigerator for up to three days.

    You can freeze them. Before you slice them into sticks, wrap the whole slices of bread in plastic wrap. Then, put them together in a freezer bag. They will stay fresh in the freezer for up to three months.   

    Recipe Tips and Tricks

    • Lay some parchment paper in the air fryer basket so they don’t stick. 
    • Use a pizza cutter to turn the bread slices into French Toast sticks. 
    • Place the French toast in the air fryer basket in a single layer.
    • Top with pancake syrup.

    What Kind Of Bread Should I Use?

    The best type of bread for French Toast will be something large enough to soak up the batter and be easy to flip. That’s why I like to use thick-sliced bread, like Texas toast. This is also a great recipe for stale bread in your kitchen. People used to use stale bread to make French Toast all the time. 

    If you like sweeter flavors, then use thick slices of Brioche bread. Use less sugar in the batter so the French toast isn’t too sweet.
