Air Fryer Potato Chips
These crispy homemade potato chips are super easy to make in the air fryer. Perfect for when you’re craving a salty, crunchy snack with loads of flavor. You need to try Air Fryer Potato Chips at least once in your life!
I’ve been getting lots of use from my new air fryer. I think it might just be my favorite appliance ever. You can do so much with it, including making your own homemade chips. Air fryer chips are well worth the extra effort!
I’ve made oven-baked potato chips before and prefer the air-fried version. I don’t own a deep fryer (I hate the smell), so I haven’t made them that way before. If I can make something in the air fryer, then that’s how I’m doing it!
Crispy. Perfectly seasoned with a bit of a peppery kick. Each bite comes with a crunch. These air fryer potato slices are perfection!
Ingredients

- Russet potatoes: You can use other potatoes in a pinch, but Russet potatoes work best for potato chips. My grocery has them labeled as “baking potatoes” instead of Russet potatoes. They are rough potatoes that look like you dug right from the earth.
- Garlic salt
- Oregano – Use dried oregano. I like Litehouse Freeze Dried Oregano.
- Blackened seasoning: If you don’t have blackened seasoning, Cajun seasoning has a similar flavor profile. I’ve never seen blackened seasoning in Canadian grocery stores, but I know it’s big in the USA. I ordered mine on Amazon to see what it was like. It does remind me of Cajun seasoning, so use that if you can’t find blackened seasoning!
- Grapeseed oil: I added my grapeseed oil to a spray bottle for my air fryer recipes. It’s good for high-heat recipes like these chips. I tried olive oil, and I found it had more burnt spots on the chips.
- Freshly chopped parsley: Totally optional. You can use it if you want to dress up the recipe a little for presentation.
How to Make Air Fryer Potato Chips
Follow along to learn how to make air fryer potato chips!
- Step One: Using a food processor with a very thin slicing disc, slice the potatoes to the same thickness, around 1/16 or ⅛ inch thick. You can also use a mandoline or a potato peeler. (I used a mandoline, which is easy and peasy!)
- Step Two: Put the slices in a large bowl of very cold water. Rinse off as much of the potato starch as you can. Drain and refill.
- Step Three: Let the potato slices soak for 10 minutes, then drain and lay the slices out on a large towel. Pat dry.
- Step Four: While the potato slices soak, preheat the air fryer to 360°F if your model calls for preheating.
- Step Five: Lay the slices out in a single layer on a large pastry mat, a sheet of aluminum foil, or a sheet pan. Spray the slices with grapeseed oil.
- Step Six: Mix the garlic salt, oregano, and blackened seasoning in a small mixing bowl. Lightly sprinkle the seasoning on the potato slices. You will likely have extra seasoning after, which you can set aside in case you need more. Salted potatoes will “sweat,” so blot off any excess moisture you see before cooking them.
- Step Seven: Put the potato slices in a single layer in the air fryer. You will likely do 3 to 4 batches, depending on the size of your air fryer. The slices will curl as they cook, so keeping them separate is best.
- Step Eight: Cook in the air fryer at 360°F for 7 to 10 minutes or until the chips are golden brown in spots and crispy. Flip the chips halfway through for even browning. Use the first batch as a test run to see if the chips need more time or whether you need to add more seasoning.
- Step Nine: Cook in batches until all the potato slices have been cooked.
- Step Ten: Garnish with chopped, fresh parsley, if desired.
Storage Instructions
Cool the potato chips to room temperature before storing them in an airtight container or a ziploc bag. They will last about 2 to 3 days at room temperature.
You can also freeze them. Place the air-fried chips on a baking sheet lined with parchment paper and put in the freezer. When the chips are frozen, put them in a freezer ziptop bag for up to 2 months. You can reheat in the air fryer when you’re ready to enjoy them!
Why Soak the Potato Slices?
Soaking the potatoes after slicing them helps eliminate most of their starch. This will make for a crispier potato (you can do this with homemade french fries, too!). It also helps to keep them from sticking together if they touch while cooking.
Why Are They Soggy?
Too much moisture makes for a soggy chip. Make sure you dry the potato slices well with a kitchen towel. Blot any excess moisture with a paper towel before air frying. Salted potatoes will “sweat” while waiting for their turn in the air fryer.
You can also cook them for a little bit longer to help dry them out.
Recipe Tips and Tricks
- Get an oil sprayer if you use your air fryer often. Never use an aerosol cooking spray like PAM in an air fryer, or you could ruin the basket coating. You can use it on many different recipes in your air fryer.
- If you don’t have a mandoline or a food processor to thinly slice the potatoes, use a potato peeler. Try and get the slices as thin as you can. If they are a little on the thicker side, make sure to increase the cooking time to get them crispy.
- Don’t skip the rinsing and soaking step! Soaking the potato slices in very cold water helps to remove the excess starch. The water will be all murky after the 10-minute time mark.
- Ensure the potato slices don’t have excess moisture before putting them in the air fryer. They will be much crispier, crunchier, and so much more delicious.
- Do a “test run” with your first batch to gauge cooking time with your air fryer. Cooking time always varies depending on the type of air fryer you have and personal preference for “doneness”.
- If blackened seasoning is hard to find where you live, use cajun seasoning or simply omit it. If you’re not a big fan of spice, that might be a good idea for you!
What Kind of Potatoes to Use
I prefer russet potatoes for my homemade chips. However, I have seen people use Yukon Gold, red, and even purple potatoes. You want a good starchy variety of potatoes.

Tried this recipe this evening. Followed the instructions as written. First my air fryer blew the chips all over the place and they stuck together. Second, the chips were burnt at 8:00 minutes. I made them the 1/16th thickness. Perhaps the thicker setting would have yielded better results. Too much work to do this again. Wish it would have worked out. Really wanted to make at home.
