Ice Cream Pie
Ice Cream Pie is the perfect summer dessert to serve up to guests. Layers of crushed waffle cones, chocolate syrup, and chocolate and vanilla ice cream make this dessert perfect for summer!

If you want to take your dessert game to the next level, an ice cream pie is the way to go. It’s the perfect treat to enjoy on hot summer days or to celebrate a special occasion with friends and family. Skip the ice cream shop and make your own.
This past long weekend, I made my very first Ice Cream Pie. For some reason, I always thought they would be harder to make. I don’t know why I assumed I needed special equipment like an ice cream maker! I had just about everything I needed already in my kitchen. It was super easy to make.
The crust is waffle cones broken into small pieces, sliced almonds, butter, and honey to hold it together. A crunchy texture and the soft sweetness of the ice cream make a heavenly dessert. I love caramel, but my daughter doesn’t, so we only used chocolate.
We usually buy Dairy Queen ice cream cake for birthdays, but making my own is much cheaper and tastes just as good!

Ingredients

- Honey
- Salted butter
- Waffle cones
- Sliced almonds
- Vanilla ice cream – Use your favorite brand of store-bought ice cream, or try my recipe for homemade ice cream.
- Chocolate sundae syrup – Try my hot fudge sauce instead.
- Chocolate ice cream
- Caramel syrup – Try my caramel sauce.
- Whipped cream – Try my homemade Cool Whip.

How to Make Ice Cream Pie
Follow along to learn how to make ice cream pie!
- Step One: In a bowl, combine honey, melted butter, waffle cones, and ¾ cup almonds and mix well.
- Step Two: Press the mixture into the bottom and along the sides of the 9-inch pie plate. Freeze for 30 minutes or until firm. Layer softened chocolate ice cream in an even layer onto the crust.

- Step Three: Spread with chocolate syrup. Freeze for 30 minutes or until firm.
- Step Four: Place the softened vanilla ice cream over the chocolate syrup. Cover with plastic wrap; freeze for 4 hours or until firm.

- Step Five: Before serving, drizzle with the topping of choice. Top with dollops of whipped cream and remaining almonds.

Variations and Substitutions
- Use maple syrup or corn syrup in place of the honey.
- Use crushed Oreo cookies to make an Oreo cookie crust instead.
- Use a baked pie crust instead of the waffle cone crust.
- Use crushed graham crackers to make a graham cracker crust.
- Instead of a pie plate, use a springform pan.
- Try crushed sugar cones instead of waffle cones to make a crushed sugar cone crust.
Switch It Up
- Coffee Ice Cream Pie: Use coffee ice cream with a chocolate crust.
- Oreo Ice Cream Pie: Use an Oreo cookie crust with Oreo ice cream and crushed Oreos for garnish
- Strawberry Ice Cream Pie: Use strawberry ice cream with a layer of strawberry sauce or strawberry jam.
- Peanut Butter Ice Cream Pie: Use a peanut butter cookie crust with peanut butter ice cream and top with chopped peanut butter cups.
- Chocolate Chip Cookie Ice Cream Pie: Use a chocolate chip cookie crust, cookie dough ice cream, and garnish with chocolate chips.
- Butter Pecan Ice Cream Pie: Use a graham cracker crust and butter pecan ice cream with a garnish of candied pecans and butterscotch sauce.
- Peppermint Ice Cream Pie: Use a chocolate cookie crust, peppermint ice cream and garnish with crushed peppermints.
- Chocolate Banana Ice Cream Pie: Use a chocolate cookie crust, chocolate ice cream, banana ice cream and a layer of sliced bananas. Make it a banana split ice cream pie with maraschino cherries and whipped cream.
- Caramel Toffee Ice Cream Pie: Use a toffee cookie crust, toffee ice cream, caramel ice cream and toffee bits with caramel sauce for garnish.
- Chocolate Ice Cream Pie: Use a chocolate cookie crust, chocolate ice cream and loads of hot fudge sauce.
- Birthday Ice Cream Pie: Use a waffle cone crust, funfetti ice cream with lots of rainbow sprinkles and whipped cream for garnish.

Storage Instructions
Wrap any leftover ice cream pie tightly in plastic to prevent freezer burn. Store in the freezer for up to a week for optimal results. You can store it for longer if you wish, but not that the quality may diminish over time.
Recipe Tips & Tricks
- For the crust, crush your waffle cones using a resealable bag and a rolling pin. You can also use a food processor.
- One helpful tip for slicing frozen pie is to soak your knife in hot water for 2-3 minutes. Then, remove the knife from the water, wipe it off with a paper towel, and slice. The hot knife will easily slice through the ice cream.
- Experiment with different flavors of ice cream to make this pie your own.
- When you add the layers of ice cream, use softened ice cream. It makes scooping and spreading easier. Let the ice cream sit at room temperature for a few minutes before using it.

I went plain with this recipe, but the sky is the limit when it comes to toppings for ice cream pie.
- Caramel, hot fudge, chocolate, etc.
- Peanut butter
- Fresh fruit
- Sprinkles
- Chopped-up candy bars (Snickers, Twix, Milky Way, etc.)
- Crumbled waffle cone
- Canned fruit topping
- Nuts

FAQ
For this ice cream pie, I used vanilla and chocolate ice cream. However, you are welcome to use any flavor of ice cream you want. Love cookie dough? Add that in, or do mint chocolate chip. The possibilities are endless, and you don’t have to use plain ice cream like me. So grab your favorite ice cream and go for it.
Absolutely! If you are not a huge fan of waffle cones, you can easily swap them for a graham cracker or Oreo crust. Pre-cooked or no-bake crust will work for this ice cream pie recipe.
If your ice cream is only slightly melted, you can re-freeze it. However, when the ice cream begins melting, the space opens up to allow bacteria to grow, so refreezing thawed ice cream is never a good idea. Always slice and serve and then put back your remaining pie so it can stay frozen.
