This was an interesting experiment – used a GF cake mix to see if this eay recipe would work out being gluten-free. Seemed pretty good – a little bit gelatinous – good flavor, but the texture left something to be desired. I will try it again, using a wheat flour cake mix to see if the texture is improved.
Worth another shot.
Well I have been looking forward to making this for quite awhile now. We made it tonight and I found that there was much too much raw cake mix left in many pockets and that is after I pored and pored Sprite over every dry spot I could see. Also, there was too much liquid left over. The taste of the stuff that we could eat was good but I think the next time I will mix the cake mix with the Sprite first to make sure everything is mixed together with no dry mix left over and then poor over the fruit.
Great idea about mixing cake mix with the soda. I wondered about sprinkling a couple tablespoons of tapioca over the fruit before adding cake mix and soda batter. Might thicken up the liquid.
