When you don’t have time to bake but want homemade cookies, this strawberry cake mix cookie recipe is the answer. It will always give you perfectly chewy cookies with a light and fruity flavor.

  • Strawberry cake mix: This gives the strawberry crinkle cookies a delicious strawberry flavor.

How to Make Strawberry Cake Mix Cookies

  • Step One: Preheat oven to 325°F/160°C.  Line 2 cookie sheets with parchment paper or spray with non-stick cooking spray.
  • Step Two: Add the strawberry cake mix, oil, eggs, and vanilla extract to a large mixing bowl.  Mix until well combined, then fold through 3/4 cup of the white chocolate chips.

  • Step Three: Use a cookie scoop to take spoonfuls of the mixture and place them on the prepared cookie sheets.  Gently press on the remaining 1/4 cup of white chocolate chips.
  • Step Four: Bake for 10 minutes or until just starting to turn lightly golden.  Cool on the cookie sheets for 5 minutes before transferring to a wire cooling rack to cool completely.

    • Dust with powdered sugar.    
    • Mix in some sprinkles. They will look like funfetti cake mix cookies, but taste like strawberries. 
    • Use dark chocolate chips. If you love chocolate-covered strawberries, this is an easy way to replicate them.

    These cookies can be stored in an airtight container at room temperature for up to 3 days.

    These cookies are suitable for freezing.  Freeze in an airtight container for up to 3 months.  Thaw at room temperature before enjoying.

    • Be careful when you remove the cookies from the oven and baking sheet. They will still be very soft but firm up quickly as they cool.  
    • Do not overbake the cookies. They will turn golden quickly and will lose their pink color.  
    • The cookie dough is very sticky and might be difficult to roll into balls. If so, use a cookie or ice cream scoop to place them on the trays.

    Both cake mix and cookie mix include the same basic ingredients – flour, sugar, and baking soda. But the most significant difference between them is the amounts of the ingredients. The cake mix makes a thinner batter. Cookie mix makes a thicker dough easier to handle and roll into balls. 

    My easy strawberry cake mix cookies have a thinner, almost sticky batter. For best results, I suggest using a cookie scoop when you place them on the lined baking sheet. 

    Can I Freeze The Cookie Dough?

    Yes, you can freeze the cookie dough and save it for later. I suggest rolling cookie dough balls on a greased cookie sheet. Then, put the baking sheet in the freezer. Once frozen solid, you can set the frozen cookie dough in a freezer bag or freezer-safe container. They will stay fresh in the freezer for up to six months. 

    What Size of Cake Mix To Use 

    Use a regular box of cake mix at the grocery store. Use a 15.25-ounce box of strawberry cake mix in this easy cookie recipe.

    What is the best way to let them cool?

    Since they come out of the oven so soft, I do not recommend using a wire rack. The cookies might fall in between the slats. Instead, let the cookies cool on a silicone mat.

    • 1 box strawberry cake mix 15oz box
    • cup vegetable oil
    • 2 large eggs
    • 1 tsp vanilla extract
    • 1 cup white chocolate chips divided

    Instructions

    • Preheat the oven to 325℉. Line 2 cookie sheets with parchment paper or spray with non-stick cooking spray.
    • Add the strawberry cake mix, oil, eggs and vanilla extract to a large mixing bowl. Mix until well combined.
    • Fold in ¾ cup of the white chocolate chips.
    • Using a medium cookie scoop, add spoonfuls of cookie dough to the prepared cookie sheets. Gently press on the remaining ¼ cup of the white chocolate chips into the cookie dough.
    • Bake for 10 minutes or until just starting to turn lightly golden.
    • Allow the cookies to cool on the cookie sheet for 5 minutes before transferring to a wire cooling rack to cool completely.
