Christmas Cake Mix Cookies

Christmas Cake Mix Cookies are one of the easiest Christmas cookie exchange recipes ever. Boxed cake mix saves you tons of time in this simple holiday treat. The cookies are sweet and tasty!

If you haven’t tried cake mix cookies yet, you need to! It’s seriously one of the easiest cookie recipes you’ll ever make.

These cookies have a Christmas twist with the addition of holiday colored sprinkles. Serve them at your holiday parties or in a holiday cookie exchange

It’s also a great recipe for the kids to help you make. Save some for Santa!

    To make Christmas cookies, you’ll need these ingredients.

    • Box of white cake mix – You don’t have to actually make the cake. You will be using the actual cake mix powder in the box.
    • Canola or vegetable oil 
    • Eggs
    • Vanilla extract – I prefer pure vanilla extract, but artificial vanilla is fine as well. You can make your own homemade vanilla extract.
    • Red, white and green sprinkles

    How to Make

    1. In a large bowl, mix together the cake mix, vegetable oil, eggs and vanilla until smooth.
    2. Add in each of the 3 tablespoons of different colored sprinkles and stir until well incorporated.
    3. Chill the dough in the fridge for 30 minutes.
    4. About 10 minutes before you take the dough out of the fridge, preheat the oven to 350F and line a baking sheet with parchment paper.
    5. Remove the dough from the fridge and scoop the dough into balls on the prepared baking sheet.
    6. Add additional sprinkles to each ball of dough.
    7. Place the baking sheet in the oven and bake for 8 to 10 minutes or until the cookies are golden brown on the bottom. Do not overbake.
    8. Remove the baking sheet from the oven and let the cookies cool on a cooling rack. You can serve them warm or at room temperature.

    Which cake mix is best for cookies?

    It’s really up to you! My preference is Betty Crocker cake mixes. I usually watch for sales and buy a bunch when I can get a good deal. 

    Use whatever brand of white cake mix (or vanilla cake mix) you have at home.

    Variations

    You can switch out the flavor of cake mix you use. I prefer using a white cake mix so it’s more festive, but other flavors will also work fine.

    You could try a chocolate cake mix or a French vanilla cake mix if you like. A yellow cake mix would also be yummy.

    Add-ins

    I kept mine simple with just the addition of Christmas sprinkles, but you could add some other ingredients to suit your tastes.

    Some ideas for add-ins:

    • White chocolate chips
    • Dried cranberries
    • Nuts (chopped walnuts, pistachios or pecans)
    • Holiday M&M’s
    • Crushed candy canes

    Storage Instructions

    This recipe makes about 22 cookies. Store any leftover cookies in a covered container at room temperature for up to 5 days.

    How to Freeze

    These cake mix cookies for Christmas can also be frozen. Bake them as normal and let them come to room temperature.

    Once they’ve cooled completely. Place the cookies on a parchment-lined baking sheet and put in the freezer. 

    When the cookies are frozen, you can place them in a resealable freezer bag and store in the freeze for up to 3 months.

    What to Serve with Christmas Cookies

    Serve with a festive drink like eggnog or a gingerbread latte.

    They also pair well with hot chocolate! I love my Cinnamon Hot Chocolate.
