Ritz Cracker Cookies are an easy no-bake Christmas cookies that are perfect for holiday parties. Buttery crackers with creamy peanut sandwiched inside are dipped in smooth chocolate to make a sweet and salty treat!

- Original Ritz crackers – These are the plain Ritz Crackers.
- Creamy peanut butter – Not the sugar free variety since you will want the added sweetness.
- Powdered sugar
- Semisweet chocolate chips
- Butterscotch baking chips
- Vegetable shortening
- Holiday sprinkles
How to Make Ritz Cracker Cookies
Step One: Line 24 crackers, rounded side down, on a large baking sheet lined with parchment paper. Set aside.
Step Two: Mix together peanut butter and powdered sugar until well combined and smooth.
Step Three: Scoop approximately 1 teaspoon of the peanut butter mixture onto each cracker and spread evenly. Top with another cracker, flat side down. Chill the cookies in the fridge (or freezer if your kitchen is very warm) while you prepare the chocolate.
Step Four: Melt the chocolate chips, butterscotch chips, and shortening in 30 second increments in the microwave at 50% power. Stir well between each increment and heat until melted and completely smooth.
Step Five: Use a fork to dip each cracker cookie into the melted chocolate to coat. Gently tap the form on the edge of the bowl to let the excess chocolate drip off of the cracker cookie before placing it on the baking sheet.
Step Six: Top the cookies with sprinkles and let set completely in the fridge.

- Use crunchy peanut butter instead of creamy peanut butter.

- Top with chopped nuts or flaked sea salt instead of sprinkles.
