French Onion Dip

This French Onion Dip is creamy, rich, and full of real onion flavor from slowly cooked onions. It tastes way better than the store-bought kind and only uses simple ingredients. Set it out with a bowl of chips, and it won’t last long.

I’ve never been a big fan of raw onions. They’re just a bit too sharp for me. But caramelized onions are a completely different story. Once they cook down and turn soft and golden, they get this rich, almost sweet flavor that I can’t get enough of. That’s why I love making this creamy dip so much. It’s all about those onions. I’ll make a batch for movie night or game night, grab a big bowl of ruffled plain potato chips, and it always disappears faster than I expect.

I like to take a little shortcut when I make this by adding a small sprinkle of sugar to the yellow onions while they cook. It helps them brown faster and brings out that natural sweetness without having to stand at the stove forever. Instead of waiting 40 minutes or more, I can get that soft, golden, almost jammy texture in about 15 to 20 minutes. It still gives the dip that rich onion flavor I’m after, just in a lot less time.

  • Unsalted butter: Let it fully melt before adding the onions so they start cooking evenly right away.
  • Yellow onion: Chop it finely and evenly so it cooks at the same rate and blends smoothly into the dip.
  • Sugar: Don’t skip it. It helps the onions caramelize faster and deepen in flavor.
  • Salt: Add it early to help draw out moisture from the onions as they cook.
  • Sour cream: Use full-fat sour cream for a nice, creamy texture. Let it sit at room temperature for a few minutes so it mixes more easily.
  • Mayonnaise: Stir it well before measuring so it’s smooth and not separated.
  • Garlic powder: Start with the amount listed. You can always add more to taste later.
  • Black pepper: Freshly ground will give you the best flavor.
  • Chives: Add just before serving so they stay fresh and bright.

How to Make French Onion Dip

  • Step One: Melt the butter in a skillet over medium heat.
  • Step Two: Add the chopped onion, sugar, and salt. Cook, stirring often, until the onions are soft, golden, and caramelized, about 15 to 20 minutes.
  • Step Three: Remove from heat and let the onions cool completely.
  • Step Four: In a bowl, stir together the sour cream, mayonnaise, garlic powder, and black pepper.
  • Step Five: Fold in the cooled onions until well combined.
  • Step Six: Cover and refrigerate for at least 1 hour before serving to let the flavors develop.
  • Step Seven: Sprinkle with chives before serving.

Variations and Substitutions

  • Make it lighter: Swap in light sour cream and light mayo. The dip will still be creamy, just a bit less rich.
  • Use Greek yogurt: Replace some or all of the sour cream with plain Greek yogurt for a tangier flavor and extra protein.
  • Add cream cheese: Mix in a few tablespoons of softened cream cheese for a thicker, richer dip.
  • Add Parmesan for extra flavor: Stir in a few tablespoons of finely grated Parmesan cheese for a deeper, savory taste.
  • Try sweet onions: Use Vidalia or another sweet onion for a milder, slightly sweeter flavor.
  • Boost the flavor: Stir in a splash of Worcestershire sauce or a pinch of onion powder for a deeper savory taste.
  • Make it herby: Add fresh herbs like parsley, dill, or extra chives for a fresh twist.
  • Add a little heat: Mix in a pinch of cayenne or a few dashes of hot sauce.
  • Chunky or smooth: Leave the onions a bit chunky for texture or chop them finer after cooking for a smoother dip.

Storage Instructions

  • Refrigerator: Store the dip in an airtight container in the fridge for up to 3 days.
  • Before serving: Give it a good stir, as it may separate slightly while it sits.
  • Make ahead: This is a great make-ahead dip. The flavor actually gets better after a few hours in the fridge.
  • Freezing: Not recommended. The texture can become watery and grainy once thawed.

Recipe Tips and Tricks

  • Take your time with the onions: Don’t rush this step. Let them slowly turn soft and golden for the best flavor. Those brown bits on the bottom of the pan taste delish!
  • Let the onions cool completely: Adding them while warm can thin out the dip and affect the texture.
  • Taste and adjust: After everything is mixed, taste and add a pinch more salt or pepper if needed.
  • Chill longer if you can: An hour works, but a few extra hours really help the flavors come together.
  • Use a wide skillet: It helps the onions cook more evenly and brown better instead of steaming.
  • Serve it thick: If the dip feels a little loose, let it chill longer to firm up before serving.
