When I want to whip out a crowd-pleasing dessert that’s simple to serve and easy to prepare, I’ll make this quick slice cake! It’s an older recipe that has been handed down over the years, but it still comes out perfectly every single time it’s made. 

Talk about a reliable family favorite!

For this particular dessert, I’d say that using a baking sheet or cookie pan with edges is where it’s at. This makes it a breeze to slice and lets you evenly portion the cake without making a mess. And honestly, who doesn’t love an easy clean-up?

    How to Make Quick Slice Cake

    • Step One: Preheat the oven to 350°F and grease a cookie sheet.
    • Step Two: Add the shortening and sugar to a mixing bowl.
    • Step Three: Cream together with a mixer until combined.
    • Step Four: Add eggs, almond extract, and vanilla extract before stirring in the flour and baking powder.
    • Step Five: Spread 2/3rds of the batter on the cookie sheet.
    • Step Six: Spread the pie filling on top and then drop the remaining batter over the entire mixture.
    • Step Seven: Bake for 40 minutes.
    • Step Eight: Sprinkle with powdered sugar while the cake is still warm.

    Recipe Tips and Tricks

    • Don’t skip the almond extract. It might sound simple, but almond extract truly lifts this recipe as it’s warmer and sweeter than just using vanilla extract.
    • You don’t need to use powdered sugar in this recipe, but I find that sprinkling it over the cake while it’s still warm creates an almost syrup-like glaze.
    • Be careful to check what kind of oven you have, as the wrong temperatures can result in a dense or soggy cake. Fan-forced ovens will typically be 10-20 degrees cooler for most recipes. So, make sure you check if you’re using a conventional or fan oven!
    • Don’t overmix your batter. You’ll want to work a bit of air into your quick slice cake, but it’s important not to overmix. Otherwise, you’ll be dealing with a dense and overworked batter!
    • Don’t be tempted to mix the dry ingredients in with an electric mixer. I usually fold these in gently to keep plenty of air in the cake and avoid overmixing. If you must use an electric mixer, keep it at the lowest possible setting.

    Variations and Substitutions

    • If you’re a fan of super-sweet bakes, you can easily whip up a simple vanilla frosting or whipped cream to enjoy with your cake. But honestly, you probably won’t need it!
    • Not a huge fan of cherry filling? You can replace it with virtually any fruit you like! I love blueberries and apples, but virtually any sturdy fruit would hold up reasonably well in this recipe.

    Like I mentioned you can use whatever pie filling you have. Make your own or use your favourite canned product.

    Can I Freeze?

    You can freeze this quick slice cake for up to 3 months. Just make sure you separate each slice with a piece of parchment paper to avoid any sticking.

    Ingredients
     
     

    • 1 cup shortening
    • 2 cups sugar
    • 1 tsp vanilla extract 21
    • 1 ½ tsp almond extract
    • 4 large eggs
    • 3 cups all-purpose flour
    • ½ tsp baking powder
    • 2 cans pie filling of your choice 540ml/21oz cans
    • Powdered sugar for garnish, optional

    Instructions

    • Preheat oven to 350°F. Grease a baking sheet.
    • Add shortening and sugar to a mixing bowl. Cream together with a mixer until combined. Add eggs, almond extract and vanilla extract. Stir in flour and baking powder.
    • Spread ⅔ of the batter on the cookie sheet. Spread the pie filling over top. Drop remaining batter by spoonfuls on top.
    • Bake for 40 minutes. Sprinkle on powdered sugar while still warm.

    Notes

    Make sure you use a cookie sheet that has sides on it.

    1. Sorry for all the typos.

      1. If your cookie sheet has sides, use that. Otherwise, you can use the 9×13 pan. I wouldn’t use a flat cookie sheet because it will make a big mess in your oven.

    2. Can I kind my cookie sheet with alum. foil or parchment pzper. Zlternately, could I use a. 9″x13″ baking dish?
