    Ingredients
     
     

    • 1 lb chicken thighs cubed
    • ½ tsp salt
    • ½ tsp pepper
    • ¼-½ tsp red pepper flakes
    • 1 medium onion finely chopped
    • 2 medium carrots chopped
    • 3 cloves garlic finely chopped
    • 1 cup frozen peas
    • 1 cup brown rice rinsed and drained
    • 3 cups chicken broth
    • ½ cup half and half
    • ½ cup grated Parmesan cheese divided
    • 2 cups cheddar cheese divided

    Instructions

    • Rinse and drain the brown rice. Set aside.

      On #2 you reference chicjen breast but the ingredient list says which Thighs. Do you use thighs or breast. I prefer thighs but soups sometimes use breast. Which did you use?
