Cabbage Roll Soup Recipe

Cabbage Roll Soup is hearty and comforting! This delicious and easy slow cooker soup recipe is loaded with tender cabbage, ground beef, oregano, garlic, and tomatoes. Everything you love about a cabbage roll, but 100 times easier to make. Yum!

Crockpot cabbage roll soup is perfect for people who love cabbage rolls but don’t have the time (or patience) to make them. Because, let’s face it, they aren’t easy!

It’s been a while since I’ve used cabbage in our meals. It’s not that I don’t like cabbage; I do enjoy it. It’s just that my favorite recipes don’t use it as a main ingredient.

I’ve made cabbage rolls, which were the first thing I thought of making this week. The recipe I like is for unrolled cabbage rolls made with ground turkey. My aunt makes the best cabbage rolls, and hers are perfectly rolled. When I tried her recipe, they did not turn out as pretty!

    It’s also made in the slow cooker, which saves me from slaving over the stove all day. It’s slow cooker weather right now, anyway, and this soup is perfect for a frosty day.

    • Ground beef
    • Worcestershire sauce
    • Salt
    • Paprika
    • Yellow onion
    • Garlic
    • Water
    • Dried oregano
    • Dried basil
    • Tomato sauce
    • Diced tomatoes

    How to Make Cabbage Roll Soup

    Follow along to learn how to make cabbage roll soup. Your house is going to smell so good!

    • Step One: Add onion, garlic, Worcestershire sauce, paprika, ground beef, and salt to a skillet on medium heat. Cook until the ground beef is browned (about 7 to 10 minutes).

    • Step Two: In a 6-quart slow cooker, add cabbage, oregano, basil, tomato sauce, diced tomatoes, water, and the ground beef mixture and stir to combine.

    • Step Three: Cover and cook on low heat for 8 to 10 hours.
    • Step Four: In the last half hour of cooking, cook the rice according to the package directions. Add the cooked rice to the slow cooker and stir to combine.

    How to Make on the Stovetop

    1. Use all the same ingredients and measurements. Start by cooking the ground beef, onions, and garlic in a large pot over medium heat. 
    2. Once the ground beef is cooked, add the rest of the ingredients except the rice. Bring to a boil, then reduce the heat to medium low. Simmer for 1 hour. 
    3. Add in the cooked rice before serving.

    What to Serve with It

    Though Cabbage Roll Soup is filling on its own, it’s always nice to have something a little extra to enjoy it with. Try a buttered dinner roll to sop up all that delicious savory broth. It’s also yummy with a grilled cheese sandwich for a satisfying lunch.

    • Fresh herbs – Chopped parsley, dill, or cilantro for a fresh, bright flavor.

    Storage Instructions

    How to Make Low Carb

    Easy peasy! To make Cabbage Roll Soup a low-carb meal, just omit the rice. It’s not that big of a deal, and you’ll still have the same delicious flavors. Rice will not make or break this soup recipe.

    • 4 cups cabbage roughly chopped
    • 1 lb lean ground beef
    • 1 tsp Worcestershire sauce
    • 1 tsp salt
    • 1 tsp paprika
    • 1 yellow onion chopped
    • 3 cloves garlic minced
    • ½ cup water
    • 1 tsp oregano
    • ½ tsp basil

      Mine was very thick, no broth, Followed the recipe to the letter. Was nothing like soup.

    2. to be a soup, it has just too much cabbage and not enough broth in it. I followed the recipe but it was way to thick for a soup so i added vegetable broth to loosen it up a bit, have to wait until it cooks for several hours to see what the thickness is then. will let you know when it is done, more likely in the late morning as it is 10 pm. already.

    7. I make one similar to this, except mine has less tomatoes, 2 cans beef broth, i can sauerkraut juice, and 1 1/2 cups spicy V-8 juice. Give it a good kick.

I will definitely try this…my way of making “unrolled” cabbage rolls has been to brown hamburger and onion, season to taste, saute cabbage to soften a bit, layer the two in a dutch oven and pour over this a heated can of tomato soup that has a Tbsp. or so of sugar added, and bake for a good 45 minutes…serve over cooked rice…simple but delicious!!

      So good!  I am not one to gush about such things but being as I have searched for this and made it 6 or 7 times now, it deserves a comment.  I add a little sour kraut and horseradish for zing but that is my personal taste maybe not for all.  Thank you for this perfect recipe!

      I love this recipe and it’s a little familiar. My mother always did cabbage rolls without the rolling. She made it like a casserole instead. This looks delicious !

Have it in my Crock Pot now, as I write, and it smells delicious…..I am sure it will taste the same.  Thanks for converting a long arduous process and making it simple.  I did not alter one thing, so many comments tell me to go with it as is…thanks upfront, I know by the smell we are in for a wonderful dinner.  Serving a side of creamy cucumbers and some fresh bread…..cannot wait till dinner!!!

      Making this now but dislike that’s it’s a 3 step process…going to cook the meat in crockpot on high, then add soupy ingredients than the uncooked rice straight to the crockpot with added water….I’ll let you know if it works….

    17. Hubby and I love eating Cabbage Roll Soup. We both grew up eating cabbage. We have been making it on the stove top. I found your way making it in the Crockpot . I see you added couple extra ingredients to your recipe. I will add them when we make it up. I have found so many recipes. To make in the Crockpot, makes it easier for us. Make a Salad and some Bread there’s your dinner. We love your recipes. Thank You Stacie!!
