Cabbage Roll Soup Recipe
Cabbage Roll Soup is hearty and comforting! This delicious and easy slow cooker soup recipe is loaded with tender cabbage, ground beef, oregano, garlic, and tomatoes. Everything you love about a cabbage roll, but 100 times easier to make. Yum!

Crockpot cabbage roll soup is perfect for people who love cabbage rolls but don’t have the time (or patience) to make them. Because, let’s face it, they aren’t easy!
It’s been a while since I’ve used cabbage in our meals. It’s not that I don’t like cabbage; I do enjoy it. It’s just that my favorite recipes don’t use it as a main ingredient.
I’ve made cabbage rolls, which were the first thing I thought of making this week. The recipe I like is for unrolled cabbage rolls made with ground turkey. My aunt makes the best cabbage rolls, and hers are perfectly rolled. When I tried her recipe, they did not turn out as pretty!
It’s also made in the slow cooker, which saves me from slaving over the stove all day. It’s slow cooker weather right now, anyway, and this soup is perfect for a frosty day.

- Step One: Add onion, garlic, Worcestershire sauce, paprika, ground beef, and salt to a skillet on medium heat. Cook until the ground beef is browned (about 7 to 10 minutes).

- Step Two: In a 6-quart slow cooker, add cabbage, oregano, basil, tomato sauce, diced tomatoes, water, and the ground beef mixture and stir to combine.

- Step Three: Cover and cook on low heat for 8 to 10 hours.
- Step Four: In the last half hour of cooking, cook the rice according to the package directions. Add the cooked rice to the slow cooker and stir to combine.

How to Make on the Stovetop
- Use all the same ingredients and measurements. Start by cooking the ground beef, onions, and garlic in a large pot over medium heat.
- Once the ground beef is cooked, add the rest of the ingredients except the rice. Bring to a boil, then reduce the heat to medium low. Simmer for 1 hour.
- Add in the cooked rice before serving.

What to Serve with It
Though Cabbage Roll Soup is filling on its own, it’s always nice to have something a little extra to enjoy it with. Try a buttered dinner roll to sop up all that delicious savory broth. It’s also yummy with a grilled cheese sandwich for a satisfying lunch.
Try these recipes:
Toppings
- Sour cream – Makes the soup creamy if you swirl it around!
- Fresh herbs – Chopped parsley, dill, or cilantro for a fresh, bright flavor.
- Shredded cheese – Parmesan or mozzarella for a cheesy touch.
- Croutons – Adds a crunchy texture.
- Sliced green onions – A mild oniony kick.
- Red pepper flakes – For a bit of heat.
- Bacon crumbles – Adds a savory and crispy element.
- Dollop of plain yogurt – A lighter alternative to sour cream.
- Lemon wedges – A squeeze of lemon can brighten up the soup.
- Pickled jalapeños – For a tangy, spicy punch.

Variations and Substitutions
- Swap out the ground beef for ground turkey, pork, or chicken.
- Use fresh herbs instead of dried oregano and basil.
- Try crushed tomatoes instead of a can of diced tomatoes.
- Use brown rice or leave the rice out altogether.
Storage Instructions
Store leftover soup in the refrigerator for up to 3 days in an airtight container.

Grew up on cabbge rolls. Love them, I followed your recipe it is great, but I added some brown sugar and ketsup because its the way we grew up eating cabbage rolls. Excellent
How much brown sugar and Ketchup??
Going to make this tonight! I’d like to add a little celery and carrot to my soup would you recommend additional broth in this case? Or leave the rest of the recipe as is?
Thanks so much!
I’d probably leave it as is!
Love cabbage rolls but not all the work so this looked like a great idea. Did not have time for the slow cooker so I braised the cabbage with beef stock and a bit of tomato paste. Also substituted beef stock in place of the water. Did all the browning and braising in a dutch oven, brought everything to a simmer and then put in the oven for 2 hours at 300. Delicious.
Looks like i can still comment, so I will!!! Â Saw this on pinterest and had to make it!! Â Love cabbage rolls but not all the work that they take. Â The soup is in the slow cooker now and if it tastes as half as good as it smells my family is in for a treat tonight! Â Thank you for this great recipe Stacie! Â Oh and BTW love that you are Canadian as well, no need for me to do any conversions!! Â Another plus!
My mom taught me how to make excellent stuffed cabbage. Always a hit but the older I get the less patience I have for the recipe so…I started making stuffed cabbage casserole. Oven, stove top or crock pot. Don’t add basil or oregano but secret ingredient that makes the dish is a can of sauerkraut. Same for the soup version. All freeze very well after cooking and cooling. Tks for recipe! Love it!
Do you add sour kraut, and cabbage also???
This looks great! But… Hubbie is a Polish man who won’t eat cabbage. I love it. Would this freeze? I have tried freezing cabbage rolls and that didn’t go well. What size crock pot? It would be a help if you posted that with the other basic info, ie times and servings.
I’ve never tried freezing it so I’m not sure on that. It was a 6 quart crock pot. I’ve updated the post. Thanks for the suggestion!
Leave out cabbage and add bag of frozen mixed vegtables.I have done this and its very good
Can you cut the time in half if you cook it on high? This is a great way to serve a tasty dish without the time involved for rolling!
Yep, that should work!
What if I don’t have basil what can I use instanced?
Try oregano or thyme!
this is the closest I’ll ever come to making cabbage rolls. I just don’t have the patience.
This was absolutely delicious! I added extra Worchestire sauce to the ground beef, but otherwise followed the recipe exactly. Thank You!
even though it’s spring, I had to try this. so glad I did. my husband loved it and even wanted it
again the next night. He warned me not to lose this recipe. Thanks so much for a great hit!
I made this the other day and it was TO DIE FOR!!!!!! In Maryland we have had the WINTER FROM H–, and I have been making lots of soups. This one is at the top of the list for REALLY GOOD SOUPS!!!!!!!!
Thanks, Janet
