Instead of eating fruit cocktail right out of the can, make a cake with it instead. It’s 100 times better, promise!
My mom used to serve us bowls of fruit cocktail for dessert. I wasn’t a big fan back then, but I did love it in a cake. It makes it extra moist and sweet with bits of fruit spread throughout.
The topping is my favourite part. It’s two ingredients: brown sugar and walnuts. Sweet and crunchy!
This is an excellent dessert to make when you are short on time or have unexpected company pop over for a visit.
How to Make Fruit Cocktail Cake
When I said it was easy, I wasn’t kidding. The first step is to make the cake batter by stirring together flour, baking soda, eggs, brown sugar and fruit cocktail in a large bowl. Pour the mixture into a greased 9 inch square baking pan.
Sprinkle brown sugar and walnuts on top. Bake for 45 minutes and serve. You don’t even need to mix wet and dry ingredients or use a mixer. It’s a one-bowl-recipe.
