My mom used to serve us bowls of fruit cocktail for dessert. I wasn’t a big fan back then, but I did love it in a cake. It makes it extra moist and sweet with bits of fruit spread throughout.

The topping is my favourite part. It’s two ingredients: brown sugar and walnuts. Sweet and crunchy!

How to Make Fruit Cocktail Cake

When I said it was easy, I wasn’t kidding. The first step is to make the cake batter by stirring together flour, baking soda, eggs, brown sugar and fruit cocktail in a large bowl. Pour the mixture into a greased 9 inch square baking pan.

Sprinkle brown sugar and walnuts on top. Bake for 45 minutes and serve. You don’t even need to mix wet and dry ingredients or use a mixer. It’s a one-bowl-recipe.

Ingredients

  • 2 cups flour
  • 2 tsp baking soda
  • 2 eggs
  • 1 1/2 cup brown sugar
  • 1 3/4 cup fruit cocktail, undrained

Topping

  • 1/2 cup brown sugar
  • 1/2 cup walnuts, chopped

Instructions

  1. Preheat oven to 350F.
  2. In a large bowl, stir together flour, baking soda, eggs, brown sugar and fruit cocktail. Pour into a greased 9 inch square baking pan.
  3. Sprinkle with brown sugar and walnuts.
  4. Bake for 45 minutes.
