This Mocha Cake recipe is wonderful served with coffee or tea. It’s moist and delicious with hints of chocolate and coffee flavours.
Mocha Cake
My friend, Becky, came over for a visit and we decided to make a recipe. Since I am coffee obsessed, I said we should do something with coffee as an ingredient. I didn’t feel like running to the store for ingredients so it had to be something where I had everything on hand. We were going to Tim Horton’s to get a coffee to wake up and I told Becky to buy a black coffee for a recipe. I had this Mocha Cake in mind to make!
As we sipped our coffees and let the black coffee cool, we started to make this easy recipe. It’s basically throwing ingredients into a bowl, spreading in a baking pan and then popping into the oven to bake. No fancy mixers required. Just a spoon to stir things up!
This cake took 45 minutes to bake in my oven. I recommend using a toothpick to check to see if it comes out clean. I checked on the cake at 30 minutes and the batter was still sloshing around in the pan. I knew it needed more time.
Let it cool a bit when it comes out of the oven. It will be easier to slice. The sides separated a bit from the pan making it fairly simple to cut into pieces. I made big servings because we were hungry and it smelled so good.
The chocolate chips studded on top of the cake give it some character. They were still a bit melty when we started to eat our pieces. Each bite was sweet and incredibly moist.

Mocha Cake
Ingredients
- 2 ¾ cup brown sugar
- 1 cup vegetable oil
- 1 tsp vanilla extract
- 1 cup warm brewed coffee
- 2 large eggs
- 1 tsp baking soda
- 1 tsp salt
- 3 cups all-purpose flour
- 1 ½ cups chocolate chips divided
Instructions
- Preheat oven to 350°F. Grease a 9×13 inch baking pan with cooking spray.
- In a large bowl, stir together brown sugar, vegetable oil, vanilla extract, coffee, eggs, baking soda, salt, flour and ¾ cup chocolate chips. Pour into baking pan. Sprinkle remaining chocolate chips on top.
- Bake for 45 minutes or until a toothpick comes out of the centre clean. Let cool before cutting into servings.

That seems a lot of brown sugar. Do you need to use that much? Trying to cut back on sugar.
