As fancy and fun as this tart is, it only requires a few ingredients. Check out this ingredient list to see what you need to buy from the store.

    • Sheet Puff Pastry Dough – This is the tart crust.
    • Eggs – Use whole eggs, not just yolks, for the egg wash. This helps the crust become nice and golden.
    • Lemon Curd – Gives the creamy layer its flavor and texture. You can buy lemon curd from the store or make your own
    • Cream Cheese – Use full-fat cream cheese for the best flavor and texture.
    • Sugar – Granulated sugar sweetens the lemony filling perfectly.
    • Heavy Cream – The heavy whipping cream lightens the cream cheese filling while still keeping it velvety creamy.
    • Blueberries – Use them on top as a garnish (we aren’t making a blueberry filling).
    • Mixed Berry Preserves – Save this for the end when you drizzle a little bit on top.

How to Make Blueberry Lemon Tart

Making a perfect blueberry lemon tart is easier than you might think. Here are all the steps and some photos of the entire process.

    • Step One: Heat oven to 425°F.
    • Step Two: Place puff pastry dough on a floured baking sheet and roll out a bit. Roll over the four sides twice to create a side on the puff pastry. Using a fork, poke holes throughout the bottom of the pastry sheet. Using beaten egg, brush lightly over the entire pastry sheet. Place into the oven and bake for 15-18 minutes. Remove and set aside (if pastry puffs up, use a spatula to press down), and allow to cool for at least 30 minutes.

    • Step Three: While baking puff pastry, combine cream cheese and 1⁄4 cup sugar in a medium bowl. Mix with a fork or electric mixer until combined and no lumps. Add heavy cream; mix until combined. Add lemon curd and mix until combined. Set aside.

    • Step Four: Pour the cream cheese mixture onto the cooled pastry and spread it evenly on the bottom. Evenly spread blueberries on top of the cream cheese mixture.
    • Step Five: In a small bowl, heat 1⁄4 cup preserves in the microwave for 30 seconds; mix. Heat another 30 seconds, and mix again. Drizzle the preserves over the top of the blueberry tart using a spoon.

    Variations and Substitutions

    • Use pie crust instead of puff pastry. Use a refrigerated or frozen pie crust to save yourself time.
    • Add lemon zest on top as a garnish. This will bring out the lemon flavors in the filling.
    • Replace the puff pastry with either a shortbread crust or graham cracker crust.
    • Cut and place the puff pastry sheet in a pie dish. This will make it look a bit like a pie.
    • Make mini tarts by cutting the puff pastry into smaller pieces and placing them inside a muffin tin.
    • Heat the preserves in a small saucepan over low heat. Stir it constantly to prevent it from burning.
    • Top it with fresh thyme. Now you have blueberry lemon thyme tarts with an earthy-sweet aroma.

    Storage Instructions

Store the leftover lemon curd tart in an airtight container. Keep it in the refrigerator for up to three days.

Blueberry Lemon Tart Tips and Tricks

    • Serve it either slightly warmed or chilled. It tastes amazing either way.
    • It’s best to set it in the refrigerator for an hour before serving so the curd filling can be more set.
    • Line the baking sheet with parchment paper or all-purpose flour.
    • Bring the cream cheese to room temperature before you mix it with the sugar. This will make it easier to mix.

    What Is Puff Pastry?

Puff pastry is an incredible ingredient. It is made with the same ingredients as pie dough, but it is folded over and over again to make layers. As you bake it, it will puff up a bit. It is light and delicate, and it is such a great base for this tart recipe.

    Can I Use Frozen Blueberries?

No, do not use frozen blueberries. As they thaw, the blue colors will begin to run and turn your lemon pastry shades of blue. Frozen blueberries also have a different texture than fresh ones.

If you choose to use frozen, allow them to thaw first fully, try to drain the juice off, and then place them on the puff pastry.

Why Do You Poke Holes in Puff Pastry Before Baking?

You need to poke holes in the puff pastry before you bake it. If you don’t, it will puff up so much as it bakes that it will be impossible to spread the toppings evenly to make a tart. I use a fork to poke holes in the center of the puff pastry.

Brushing the egg over the top will give the pastry a golden color, elevating its presentation value.

    FAQ

What is the sauce for the puff pastry tart?

I used a cream cheese base that I sweetened up. I also reached for lemon curd, which adds a nice tart lemon flavor to the tart. It offers that creamy texture to the tart.

What size baking sheet should I use?

This recipe best calls for a 9×13 baking sheet. However, a tart pan would also work. If you have a springform pan with a removable bottom, that will also work well.

How many servings does this make?

    This recipe makes six servings.

A fruity tart that's beautiful and delicious! The light, fluffy puff pastry is the perfect canvas for luscious lemon curd and fresh blueberries.

    Ingredients

    • 1 sheet puff pastry dough defrosted but still cold
    • 1 large egg beaten
    • 1 cup lemon curd
    • 4 oz cream cheese room temperature
    • ¼ cup sugar
    • 2 tbsp heavy cream
    • 1 cup blueberries
    • ¼ cup mixed berry preserves

    Instructions

    • Heat oven to 425°F.
    • On a floured baking sheet, place puff pastry dough and roll out a bit. Roll over each of the 4 sides, twice, to create a side on the puff pastry. Using a fork, poke holes throughout the bottom of the pastry sheet. Using beaten egg, brush lightly over the entire pastry sheet. Place into oven and bake for 15-18 minutes. Remove and set aside (if pastry puffs up, use a spatula to press down), and allow to cool at least 30 minutes.
    • While baking puff pastry, in a medium bowl, combine cream cheese and 1⁄4 cup sugar. Mix with a fork or electric mixer until combined and no lumps. Add heavy cream; mix until combined. Add lemon curd, mix until combined. Set aside.
    • On your cooled pastry, pour cream cheese mixture and spread evenly on bottom. Evenly spread blueberries on top of cream cheese mixture.
    • In a small bowl, heat 1⁄4 cup preserves for 30 seconds in the microwave; mix. Heat another 30 seconds, mix again. Using a spoon, drizzle the preserves over the top of the blueberry tart.
    • Cut with a sharp knife or pizza cutter, serve immediately.

    Notes

This can be served slightly warmed, or chilled. If you chill in the fridge for about an hour before serving, the curd mixture will be more ‘set’ whereas if you serve without chilling, it will be more gooey. Both ways are delicious.

    3. This looks amazing! What size of baking sheet do you use?

    4. What is lemon curd and where do I buy it

        1. Joanne Morden says:

The lemon “curd “ one purchases already made is not the least bit lemony. Lemon curd is so simple to make. Apart from the juice of 6 lemons, 6 eggs , 1 1/4 cups sugar and 6 Tbsp butter I add zest of 2 lemons. Simple- cook in top of a non metal double boiler until thick. The best lemon curd ever!
