How to Make Blueberry Lemon Tart
Making a perfect blueberry lemon tart is easier than you might think. Here are all the steps and some photos of the entire process.
- Step One: Heat oven to 425°F.
- Step Two: Place puff pastry dough on a floured baking sheet and roll out a bit. Roll over the four sides twice to create a side on the puff pastry. Using a fork, poke holes throughout the bottom of the pastry sheet. Using beaten egg, brush lightly over the entire pastry sheet. Place into the oven and bake for 15-18 minutes. Remove and set aside (if pastry puffs up, use a spatula to press down), and allow to cool for at least 30 minutes.
- Step Three: While baking puff pastry, combine cream cheese and 1⁄4 cup sugar in a medium bowl. Mix with a fork or electric mixer until combined and no lumps. Add heavy cream; mix until combined. Add lemon curd and mix until combined. Set aside.
- Step Four: Pour the cream cheese mixture onto the cooled pastry and spread it evenly on the bottom. Evenly spread blueberries on top of the cream cheese mixture.
- Step Five: In a small bowl, heat 1⁄4 cup preserves in the microwave for 30 seconds; mix. Heat another 30 seconds, and mix again. Drizzle the preserves over the top of the blueberry tart using a spoon.
- Step Six: Cut with a sharp knife or pizza cutter and serve immediately.

What Is Puff Pastry?

Can I Use Frozen Blueberries?
No, do not use frozen blueberries. As they thaw, the blue colors will begin to run and turn your lemon pastry shades of blue. Frozen blueberries also have a different texture than fresh ones.
If you choose to use frozen, allow them to thaw first fully, try to drain the juice off, and then place them on the puff pastry.
Why Do You Poke Holes in Puff Pastry Before Baking?
You need to poke holes in the puff pastry before you bake it. If you don’t, it will puff up so much as it bakes that it will be impossible to spread the toppings evenly to make a tart. I use a fork to poke holes in the center of the puff pastry.
Brushing the egg over the top will give the pastry a golden color, elevating its presentation value.

I used a cream cheese base that I sweetened up. I also reached for lemon curd, which adds a nice tart lemon flavor to the tart. It offers that creamy texture to the tart.
This recipe best calls for a 9×13 baking sheet. However, a tart pan would also work. If you have a springform pan with a removable bottom, that will also work well.

The lemon “curd “ one purchases already made is not the least bit lemony. Lemon curd is so simple to make. Apart from the juice of 6 lemons, 6 eggs , 1 1/4 cups sugar and 6 Tbsp butter I add zest of 2 lemons. Simple- cook in top of a non metal double boiler until thick. The best lemon curd ever!
