    Variations and Substitutions

    • Dairy-Free Option: Replace the milk with a dairy-free alternative like almond, coconut, or soy milk. Also, use dairy-free margarine instead of butter.
    • Vegan Version: Combine the dairy-free and gluten-free options mentioned above for a vegan-friendly Lemon Impossible Pie. Additionally, use an egg substitute like flax eggs or applesauce for the eggs.
    • Gluten-Free Option: Substitute the all-purpose flour with gluten-free all-purpose flour to make the pie gluten-free.
    • Citrus Variety: Experiment with other citrus fruits like lime or orange instead of lemon for a different citrusy twist.
    • Coconut Variation: If you have difficulty finding shredded coconut, you can easily use coconut flakes. Just make sure they are sweetened to maintain the sweetness of the pie.

    Can I Freeze?

Yes, you can freeze your lemon impossible pie. Allow it to cool, and place it in a freezer-safe container. It will keep well in the freezer for up to 3 months.

    Recipe Tips and Tricks

    • Fresh Lemon Juice: Use freshly squeezed lemon juice for the best and most vibrant lemon flavor. Bottled lemon juice can be used as a substitute if fresh lemons are unavailable.
    • Zesting Lemons: When zesting your lemon, only scrape the outer, colored layer (the zest) and avoid the bitter white pith underneath. If you get the pith in the mixture, it can add a bitter aftertaste to your pie.
    • Mixing the Batter: Mix the ingredients until just combined. Overmixing can lead to a dense or tough texture in your pie. You want your pie to have a creamy texture that melts in your mouth.
    • Grease the Pie Pan Well: Make sure to grease your pie pan thoroughly before you pour batter into it. This will prevent the pie from sticking. You can use butter or cooking spray. You want to ensure you add your batter to a prepared pie plate.
    • Baking Time: Keep an eye on the pie as it bakes. Depending on your oven, it may be done a little earlier or later than the suggested 1-hour bake time. It’s ready when the center is firm, and the top is a beautiful golden brown.
    • Cooling: Allow the pie to cool completely on a wire rack. This helps it set properly and makes it easier to slice.

    1. Very good easy to make

    2. 2 stars
Made this recipe today, no alterations. It was not to my taste, just tastes like sweet baked eggs.

Idk if that’s what it’s supposed to taste like, but neither my husband or I cared for it.

Got to try this already tryed few

    4. Joan Williamson Thigpen says:

I just have to ask this question, if this is a Lemon Pie, why do you put coconut in it. And it has such a small amount of lemon juice, how can it taste like lemon pie?

      1. The lemon zest is in there too and is very concentrated and the coconut adds texture and won’t affect the taste. Feel free to add more lemon zest for a very lemon-y taste if you prefer.

    5. Hi, I would love to make this recipe but the metric ingredients don’t make sense to the English (or maybe it’s just me ). For example, what is 1/8 l sugar? Best wishes. Fiona
