Are you looking for the perfect weekend breakfast? Here ya go! This easy breakfast casserole is comfort food worth waking up for. It also makes for a wonderful holiday breakfast and is perfect for Christmas morning. You can even prepare it ahead of time and bake it the next morning.

With eight servings, it’s a hearty casserole that will feed the whole family. I love big breakfasts every once in a while.

It’s a simple recipe you can customize to suit your family’s tastes. I like to change mine up every once in a while depending on what i have on hand in the fridge.

    • Breakfast sausages – Your choice of flavor. Make sure to remove the casings so it resembles ground sausage.
    • Large eggs
    • Half and half – Whole milk or 2% milk can be used if you don’t have half and half.
    • Garlic powder
    • Salt and pepper
    • Cheddar cheese – I recommend not using the pre-shredded cheese as it doesn’t melt the same as cheese that you shred yourself.
    • Frozen tater tots – No need to thaw them first.
    • Bacon
    • Green onions

    How to Make Breakfast Tater Tot Casserole

    • Step One: Preheat the oven to 350°F. Grease a 9×13 casserole dish with cooking spray and set aside.
    • Step Two: In a medium skillet, cook sausage over medium heat, breaking it into smaller pieces, until no longer pink. Remove skillet from heat and drain the grease. 
    • Step Three: Spread the cooked sausage mixture on the bottom of the casserole dish.

    • Step Four: In a medium bowl, whisk eggs, half and half, garlic powder, salt, and black pepper until combined.

    • Step Five: Pour the egg mixture over the sausage.
    • Step Six: Top with 2 cups shredded cheddar cheese.
    • Step Seven: In a single layer, evenly distribute the frozen tater tots over the sausage, egg, and cheese mixture. Don’t submerge the tater tots.

    • Step Eight: Bake for 45 minutes. 
    • Step Nine: Remove from oven and top with an even layer of 1 cup shredded cheddar cheese and bacon. Bake an additional 5 minutes.
    • Step Ten: Top with green onions. Let it sit for 5 minutes before serving.

    What to Serve With It

    Though it’s a big meal, you might like to serve this delicious breakfast casserole with other sides.

    Substitutions and Variations

    • Add more veggies like red bell pepper, green bell pepper, or onions.
    • Try with turkey sausage or Italian sausage. 
    • Add some cooked ham.
    • Add sour cream or cream cheese to make the egg mixture super creamy.
    • Want some extra spice? Add hot sauce to the egg mixture.
    • Try another kind of cheese, like Pepper Jack cheese or Monterey Jack cheese.
    • Use onion powder in place of the garlic powder.

    Storage Instructions

    Any leftover breakfast tater tot casserole can be stored in an airtight container in the fridge for up to 3 days. When you’re ready to eat it again, reheat it in the microwave.

    Can I Freeze It?

    Yes, you can freeze this cheesy tater tot breakfast casserole recipe either before you bake it or afterwards.

    To freeze before you bake it, prepare it until you’re ready to add the frozen tater tots. Wrap the casserole in layers of aluminum foil and freeze for up to two months. When you’re ready to make it, let it thaw overnight in the fridge, and then continue with the rest of the recipe steps.

    To freeze, make sure it’s cooled completely after you bake it. Cover in layers of aluminum foil and freeze for up to 2 months. When you’re ready to eat, let it thaw overnight in the fridge. Bake it at 350°F for 20 to 25 minutes or until heated through.

    Make-Ahead Instructions

    It’s an easy overnight breakfast casserole to prepare ahead of time. Prep the casserole until you’re ready to bake it in the oven. Instead, cover it in plastic wrap and store it in the fridge overnight.

    The next day, remove it from the fridge and let it sit at room temperature for 20 to 30 minutes, then bake as directed.

    • 1.5 lb breakfast sausage casings removed
    • 8 large eggs
    • ¾ cup half and half
    • 1 tsp garlic powder
    • ½ tsp salt
    • ½ tsp pepper
    • 3 cups cheddar cheese shredded (divided)
    • 1 lb frozen tater tots
    • cup bacon cooked and chopped
    • 1 tbsp green onions sliced

      This was delicious, although we had it for dinner instead of breakfast. I pretty much followed the recipe as written, but it did take 1.5 pounds of tater tots to cover the eggs in the baking dish as shown in the pictures, not 1 pound. I also wasn’t sure how much bacon it would take for 1/3 cup, so I just used four slices, and that was the perfect amount. Definitely one I’ll be making again!
