    • 2 packages cream cheese 8oz/250g packages, softened
    • 1 cup powdered sugar
    • 1 ½ tsp vanilla extract
    • 16 oz Cool Whip thawed
    • 3 cups mini marshmallows
    • 6 cups fresh strawberries diced
    • Graham crackers for serving and topping, optional

    Instructions

    • In a large bowl, add the cream cheese, powdered sugar and vanilla. Mix with a hand mixer until smooth.
    • Fold in the Cool Whip. Do not overmix so it stays fluffy.
    • Mix in the mini marshmallows and diced strawberries.
