You don’t have to be a vegetarian to enjoy them, either. Going meatless now and then is a simple way to add more variety to your weekly meal plan. And honestly? It’s easier than you might think. There are so many satisfying, flavorful options that you won’t even miss the meat.

In this post, I’m sharing some of my favorite go-to meatless meals that are perfect for busy weeknights, lazy weekends, or anytime you want something delicious without the extra effort.

    My daughter makes a stuffed pepper and your Mexican stuffed peppers sounds great. She also does a meat alternative spaghetti pie. It’s good. Some meatless meals are. We just don’t tell my husband they are meatless. 🙂 Thanks for the recipes.

  20. I’m so happy that you have meatless recipes, I love them all, but the one I’d like to try first is the Courgette/Zucchini burgers with tarragon mayonnaise, it looks and sounds yummy. Thank you for sharing these wonderful recipes.
