Flat, crispy, and filled with sweet corn kernels, these fried corn fritters are a dream come true! There’s a reason they’re a staple in the South—they just taste that darned good! Served with either sour cream or hot sauce, these crispy corn fritters will be one of your favorite ways to cook corn. They are made with frozen corn, but you can also make them with fresh summer corn! 

Even better, this corn fritter recipe doesn’t involve any deep frying. You only need enough oil to cover the bottom of the frying pan. It’s the best way to enjoy a classic Southern side dish.

    They are made entirely from scratch! Here’s what you’ll need from the store before you begin. 

    • Heavy Cream: This makes the fritters fluffier and keeps them moist. 
    • Eggs: These are the emulsifiers that hold everything together. 
    • Baking Powder: This creates a chemical reaction that helps them fluff up. 
    • Paprika: This spice adds smoky notes. 
    • White Granulated Sugar: The sugar sweetens them and rounds out the spicier flavors. 
    • Kosher Salt: This enhances all of the flavors in the fritters. 
    • Ground Black Pepper: An essential spice, it adds lower notes to the bright-tasting fritters. 
    • Frozen Corn: The corn is the base of the entire recipe. 
    • All-Purpose Flour: This mixes with the cornmeal to prevent it from tasting too grainy, 
    • Cornmeal: This adds more corn-flavoring to the fritters,

    How to Make Corn Fritters

    • Step One: Add the heavy cream, eggs, baking powder, paprika, white granulated sugar, coarse kosher salt, and black pepper to a large bowl. Mix with a fork until combined. 
    • Step Two: Add the corn to the bowl. Mix until thoroughly combined.
    • Step Three: Add the flour, cornmeal, and parmesan cheese to the bowl. Mix until thoroughly combined.

    • Step Four: Add a tablespoon of avocado oil to a large saute pan over low to medium heat.
    • Step Five: Scoop ¼ cup of the batter into the pan. Spread the thick batter out with the measuring cup until flat.
    • Step Six: Cook for 2-3 minutes in the hot oil. Flip the fritters over and cook for an additional 2-3 minutes or until golden brown.
    • Step Seven: Transfer the corn fritters to paper towels or a clean kitchen towel. Sprinkle the fritters with salt.
    • Step Eight: Repeat cooking the fritters until they are all cooked. Before adding more batter to the pan, you can add oil as needed.

    These corn fritters taste delicious when dipped in sour cream or maple syrup and served with your favorite dinner recipes.

    Variations and Substitutions

    • Make them spicier. Add some cayenne pepper to the batter. 
    • Use your favorite kind of oil. This will work with olive oil or vegetable oil, too. 
    • Make less greasy. Fry them in a toaster oven or air fryer if you want less grease. 
    • Change the milk. Whole milk can be used instead of heavy cream for the corn fritter batter. 

    Storage Instructions 

    Store leftover corn fritters in an airtight container. They will stay fresh in the refrigerator for up to three days.

    • After they are fully cooked, put the corn fritters on a paper towel-lined plate. 
    • Do not overmix the cream, spices, and eggs. Just stir it a little bit until they are all combined. 
    • If you use fresh corn, cook the corn cobs before you remove the kernels.

    To keep them crispy, I recommend reheating them in a toaster oven, air fryer, or stovetop. If you reheat them in the microwave, they will soften.

    Can I Use Fresh Corn? 

    Yes, you can make this easy corn fritters recipe with fresh sweet corn. It’s the perfect recipe for corn season. You will need about six ears of corn. Cook them by grilling or boiling them. Then, remove the kernels with a sharp knife. 

    Can I Use Canned Corn? 

    Yes, you can use canned corn in the fritters, too. Drain the corn well and remove as much moisture as you can before adding them to the batter.

    FAQ

    Is this recipe gluten-free?

    No, they are not gluten-free. A great way to make the crispy fritters gluten-free is to use gluten-free all-purpose flour. 

    Are these the same thing as hush puppies? 

    They are similar but not the same thing. Hush puppies are made without corn kernels and have a round shape. 

    How many servings does this make?

    Ingredients
     
     

    • ¾ cup heavy cream
    • 2 large eggs
    • 1 tsp baking powder
    • 1 tsp paprika
    • 1 tsp white granulated sugar
    • 1 tsp coarse kosher salt
    • ½ tsp ground black pepper
    • 20 ounces frozen corn defrosted
    • ¾ cup all-purpose flour
    • ¼ cup cornmeal
    • ¼ cup parmesan cheese grated
    • 3-5 tbsp avocado oil
    • Sour cream and green onions for garnish optional

    Instructions

    • Add the heavy cream, eggs, baking powder, paprika, white granulated sugar, coarse kosher salt, and black pepper to a large mixing bowl. Mix with a fork until combined.
    • Add the corn. Mix until fully combined.
