Whip up these easy, made-from-scratch Corn Fritters using frozen corn for a quick and delicious Southern appetizer or side dish. They fry up to be the best crispy, golden brown delights, offering a taste of home in every bite.
Add the heavy cream, eggs, baking powder, paprika, white granulated sugar, coarse kosher salt, and black pepper to a large mixing bowl. Mix with a fork until combined.
Add the corn. Mix until fully combined.
Add the flour, cornmeal, and parmesan cheese. Mix until fully combined.
To a large saute pan, add 1 tablespoon of avocado oil over medium heat.
Scoop ¼ cup of the batter into the pan. Spread with the measuring cup until flat.
Cook for 2-3 minutes. Flip the fritters over and cook for an additional 2-3 minutes or until golden brown.
Transfer the corn fritters to paper towels or a clean kitchen towel. Sprinkle the fritters with salt.
Repeat cooking the fritters until they are all cooked. You can add oil as needed before you add more batter to the pan.
