I’ve been hearing about the Keto diet everywhere! I have a few friends that are on it and have lost a ton of weight. I decided to give it a go a few weeks ago and so far so good. The food I’m allowed to eat is right up my alley. Low carb, High fat and so delicious like this Keto Cauliflower Ziti I’m sharing today.

I recently subscribed to a Keto subscription box (because you know how much I love my subscription boxes!) called Keto Can. Every month, they send out Keto snacks and food you can eat on a Keto diet. In the box was a recipe for Keto Cauliflower Ziti. I was intrigued. I love cauliflower pizza so was curious to see how this casserole would taste.

It tastes like lasagna, but without the carbs! Even if you aren’t a big cauliflower fan, you’ll probably still enjoy this recipe. The cauliflower acts as the noodles and takes on the flavours of the sauce.

    It’s meaty, cheesy and filling! I was full after one serving. Leftovers the next day heated up in the microwave were equally as delicious. The best part was that I could enjoy comfort food guilt-free!

    How to Make Keto Cauliflower Ziti

    The first step is to blanche the cauliflower. Add the cauliflower florets to a boiling pot of water and cook for 3 minutes. Drain in a colander and set aside for later.

    Next, you’ll need to cook the onions and beef. Heat olive oil in a large skillet over medium heat. Add the onion and cook until it’s softened. Then add the minced garlic and red pepper flakes and cook for one minute. Lastly, add the ground beef, salt and pepper and brown the beef.

    Once the beef is cooked, stir in the tomato paste and oregano and cook for two more minutes. Stir in the crushed tomatoes. Reduce the heat to medium-low and simmer for 15 minutes. Turn off the heat.

    Pour the meat sauce over the cauliflower and stir to combine.

    It’s time to assemble! Spread out half the cauliflower mixture in a 9×13 casserole dish. Top with half the ricotta, mozzarella and Parmesan. Then add the rest of the cauliflower mixture and top with the remaining cheeses.

    Bake for 25 minutes and serve hot.

    Keto Cauliflower Ziti

    Enjoy all the flavours of hearty Italian meal without the carbs! This keto casserole is meaty and cheesy.

    Ingredients
     
     

    • 1 tbsp extra virgin olive oil
    • 1 onion chopped
    • 2 cloves garlic minced
    • 1 pinch red pepper flakes
    • 1 lb lean ground beef
    • 2 tbsp tomato paste
    • 1 tsp oregano
    • 1 can crushed tomatoes 28oz can
    • 1 cauliflower cut into florets
    • 2 cups ricotta cheese
    • 2 cups mozzarella cheese shredded
    • ½ cup Parmesan cheese shredded
    • salt and pepper to taste

    Instructions

    • Preheat oven to 375°F.
    • Bring a large pot of water to a boil. Add cauliflower and cook for 3 minutes. Remove from heat. Drain and set aside.

    2. Could I try this with meatless sausage like beyond meat? I’m a vegetarian but I want to try keto. 

      1. I haven’t tried Beyond Meat, but it should work. Or you could just leave the meat out and it would still taste good.

      2. I make it with Lightlife smart ground and it’s absolutely delicious.

      3. My daughter is vegetarian and we have made it with beyond meat. She loves it. I use my own marinara sauce, cook the 2 meats separately with just a bit of evo and S&P. I then add my sauce to the 2 meats then assemble as directed. We have made this several times and love it. I was keto for awhile but stopped due to issues with not having a gallbladder. Still love to make this for my husband and myself.

      Everyone who tries this wants the recipe… whether they are on keto or not. I usually mix the cheeses together with an egg and basil, oregano, and parsley the add both ground beef and Italian sausage to the sauce then top with mozzarella & Parmesan.  My preference is to chop the cauliflower to small macaroni size pcs.  I’ve even made without meat and served meatballs on the side. So good … thanks for sharing this awesome recipe

      1. I like the idea of mixing the cheese together with egg for added protein- I will do this next time as well as including Italian sausage. Yum!

    4. We love this dish. So yummy!  We don’t eat beef so I used  turkey Italian sausage out of the casing. It is so good. We eat it every 2 weeks or so. Thank you!

      Can I prep this in the morning to cook the same evening?

      1. Yes, just store it covered in the fridge until you want to bake.

    6. This recipe is absolutely delicious! One of the best Keto recipes I have ever made. Leftovers heat up great!

      Can I freeze the leftovers? This was delicious! 

        1. How would you recommend reheating from frozen?

          1. I use my microwave. You can defrost the food or cook from frozen. I put it in for 2 minute intervals and stir at each interval. Everyone’s microwave is different, check to see how hot it is at each interval.

    9. How precise is the macros? I didn’t make any changes when I made it that would cause the carb count to be higher (only difference is used San Marzano tomatoes (less carbs than any of the other brands), 1.25 lbs 80% hamburger, and Galbani double cream ricotta (less carbs than any other brand), used 1/2 onion, and half bell pepper. However, Carbmanager has this recipe at 12 net carbs when I inputted it. By the way, the recipe was great. I did add a little dried basil.
