How to Make Cauliflower Rice
You can make it yourself at home with a food processor or a box grater. This post explains how to get the cauliflower into those perfect rice like bits.
Green Giant also makes a Cauliflower Rice. I found it in the frozen veggie section of my grocery store. You can use a bag of it if you want to save on time.
How to Make Low Carb Chicken Divan
The first thing to do is to melt the butter over medium heat. Add in the onions and garlic and cook until softened. Stir in the garlic salt and cauliflower rice.
Cook until the cauliflower is softened (if using raw cauliflower). If you are using the frozen cauliflower rice, cook it in the microwave first according to package directions. Then, add it in, but you won’t have to make that extra step to cook it like you would if you were using it raw.
Stir in the chicken broth and cook covered for 10 minutes.
Stir in heavy cream and lemon juice. Reduce the heat to medium low. Let simmer for 10 minutes.
Stir in mayonnaise and remove from the heat.
Add half of the chicken into the cauliflower mixture. Spread the other half of the chicken on the bottom of an 8×8 casserole dish. Top with broccoli. Then top with the cauliflower mixture. Sprinkle on the cheddar cheese.
Cover the casserole with aluminum foil or a lid and bake for 30 minutes at 350F.
Remove the cover and bake for an additional 10 minutes. Serve hot. Sprinkle fresh parsley on top if you wish.

How many servings does this make?
It serves 6.
I do not have cauliflower rice. But this sounds delicious! Can I substitute regular rice and follow the recipe?
Yes, you can do that.
I do NOT like mayo (lol). Do you think a substitution of Sour Cream would be okay?
Yes, you can use sour cream!
Sooo good!! I read the comments and ended up adding 2 TBS more butter and a little curry. Next time I’ll add a bit more curry and a little crushed pepper.
This one will be made again!!
I didn’t have mayo so I substituted with Boursin mixed with a little half & half. Very good
Any ideas on what to add to make this vegetarian?
I would use vegetable broth instead of chicken broth and leave out the chicken. You can use extra broccoli in the chicken’s place if you like, but it should still taste good without it.
This is so delicious, my entire family loves it as well! I’ve been halving the heavy cream and may, adding 1 oz of cream cheese and some bacon.. oh man it is great! Thank you for such a comforting recipe!
This is the BEST low-carb chicken divan recipe I’ve tried, by far! My favorite childhood comfort food, now keto. I add a generous amount of curry to the sauce. About to make it for the 4th time in a month.
Instead of half and half can I use 1% milk?
You can but it won’t be as creamy or have the same consistency.
This is a favorite of my family’s! I always double it for my family and we devour it. In fact, we love it so much this has become my recipe for stand alone cauliflower rice. Thank you for sharing. ❤️
This was DELICIOUS!! The whole family loved it! Thank you for this recipe!
This has quickly become my family’s favorite adaptation to the classic Chicken Divan! This is one recipe I don’t have to make one way for the fam and a different way for me. We love it!
This was a delicious stand in for my regular Chicken Divan which people always want me to make. I was worried because the sauces are so different I only made a half batch cause it was just for me. Not having the amount of chicken in cup measurement I probably added to much. I will add more broccoli next time and barely precook it before adding to the casserole. This was a delightful recipe that let me have my comfort food! So glad I tried it. Thank you!
Does this reheat well?
How much rice could be used as a substitute for cauliflower rice?
I should have clarified that I want to mix and refrigerate to bake the next day
Yes, that would be fine!
Can this be made the day ahead of time and kept refrigerated ?
I used frozen cauliflower rice. I have to tell you that I was seriously surprised that it had the texture of rice.. no kidding.. it definitely tastes better after it sits for a bit. I didn’t have a soupy issue.. followed the directions pretty much to a tee.. I did use avocado mayo but only because it’s healthier and it was fine. I was really impressed and it really wasn’t a burden to make. Thank you for the recipe..
