Broccoli Casserole

Broccoli Casserole is a classic side dish that is great for a weeknight meal or potluck. It features cheesy broccoli in a creamy mushroom sauce with a buttery cracker topping. I’m not sure which part I like best: the topping or the sauce.

Broccoli casserole is one of those tried-and-true family favorites that’s been around forever! It’s the perfect way to get greens onto everyone’s plate without fuss. From weeknight dinners to holiday gatherings, this dish is a crowd-pleaser—even for picky eaters!

It has been a staple in my family for as long as I can remember. My mom used to make it as a vegetable side dish for our Thanksgiving and Christmas dinners. When I moved out on my own, I asked her to write down the recipe for me so I could make it, too.

    • Step One: Preheat oven to 350°F.
    • Step Two: Spread broccoli and onions over the bottom of a 9×13 inch baking pan. Top with grated cheddar cheese.

    • Step Three: In a medium bowl, stir together the soup, milk, mayonnaise, and egg. Pour the mixture over the broccoli.

    • Step Five: Bake for 40 minutes until the topping is lightly browned.

    • Switch Up the Cheese: Try mozzarella, Monterey Jack, or Swiss for a different flavor.
    • Skip the Ritz: You can use another type of salted cracker. Saltines, potato chips, or gluten-free crackers can work great. You could even sprinkle seasoned bread crumbs with melted butter on top.
    • Change the Soup: You can use cream of celery, chicken, or cheese. Any will work. Just know that each cream soup will vary the flavor of this broccoli casserole slightly.

    Storage Instructions

    Let the casserole cool completely before covering and refrigerating. It’ll stay good for 3 to 4 days.

    To reheat, use the oven for the best results:

    1. Preheat to 350°F.
    2. Remove the casserole from the fridge and let it warm up before baking.
    3. Pop it in the oven for 20-30 minutes until it’s warmed and the top is crispy.

    Make-Ahead Tips

    Broccoli casserole is perfect for making ahead! Just assemble everything, but don’t bake it yet. Cover it tightly and refrigerate overnight. When you’re ready to bake, remove the cover and pop it in the oven, adding a few extra minutes to account for the chill.

    Can I Freeze?

    You can also freeze it before baking. Wrap it well, and it’ll keep for up to 3 months. To bake, skip the thawing and add 20-30 minutes to the baking time for a golden, bubbly casserole.

    The other thing is that freezing casseroles can change slightly in the form of texture. It will still taste great; it will just be somewhat softer in texture.

    Ingredients
     
     

    • 2 heads broccoli chopped
    • 1 yellow onion chopped
    • 1 cup cheddar cheese grated
    • 1 can cream of mushroom soup 10.5oz/284ml can
    • ¼ cup milk
    • ¼ cup mayonnaise
    • 1 large egg
    • 1 ½ cup Ritz crackers crushed
    • ¼ cup milk
    • ¼ cup salted butter melted

    Instructions

    1. Made this tonight and I loved it!   Even hubby went back for more!   He referred to it as awesome!   Only change I made was that I used pandora bread crumbs instead of ritz because that’s what I had.   Will definitely make this again.
