Broccoli Casserole
Broccoli Casserole is a classic side dish that is great for a weeknight meal or potluck. It features cheesy broccoli in a creamy mushroom sauce with a buttery cracker topping. I’m not sure which part I like best: the topping or the sauce.

Broccoli casserole is one of those tried-and-true family favorites that’s been around forever! It’s the perfect way to get greens onto everyone’s plate without fuss. From weeknight dinners to holiday gatherings, this dish is a crowd-pleaser—even for picky eaters!
It has been a staple in my family for as long as I can remember. My mom used to make it as a vegetable side dish for our Thanksgiving and Christmas dinners. When I moved out on my own, I asked her to write down the recipe for me so I could make it, too.

What to Serve with It
Looking for sides that pair well with broccoli casserole? Here are a few ideas:
- Sautéed Veggies: Add some variety with green beans, Brussels sprouts, or your favorite veggies.
- Roasted or Baked Potatoes: Classic comfort food that goes great with creamy dishes. Try Mashed Potato Casserole.
- Rice or Grains: Steamed rice, quinoa, or couscous make a nice, fluffy base for a balanced meal.
- Fresh Salad: A simple green salad with a vinaigrette cuts through the richness of the casserole.
- Creamy Carrots: Unique and different, leaving you wanting one more bite.
- Cauliflower Bake: You can make this dish and serve it as a weeknight side dish or take it to your next potluck.
- Sweet and Sour Cabbage: Tender, wilted cabbage is loaded with flavor in every bite.
Variations and Substitutions
- Add Extra Veggies: Toss in some carrots or mushrooms, or even swap out the broccoli with cabbage for a new twist.
- Frozen Broccoli: No fresh broccoli? No problem—use frozen! You might need to cook the casserole a little longer to ensure the broccoli thoroughly warms up and is baked through.
- Switch Up the Cheese: Try mozzarella, Monterey Jack, or Swiss for a different flavor.
- Skip the Ritz: You can use another type of salted cracker. Saltines, potato chips, or gluten-free crackers can work great. You could even sprinkle seasoned bread crumbs with melted butter on top.
- Change the Soup: You can use cream of celery, chicken, or cheese. Any will work. Just know that each cream soup will vary the flavor of this broccoli casserole slightly.

Storage Instructions
Let the casserole cool completely before covering and refrigerating. It’ll stay good for 3 to 4 days.
To reheat, use the oven for the best results:
- Preheat to 350°F.
- Remove the casserole from the fridge and let it warm up before baking.
- Pop it in the oven for 20-30 minutes until it’s warmed and the top is crispy.
Make-Ahead Tips
Broccoli casserole is perfect for making ahead! Just assemble everything, but don’t bake it yet. Cover it tightly and refrigerate overnight. When you’re ready to bake, remove the cover and pop it in the oven, adding a few extra minutes to account for the chill.

Can I Freeze?
You can also freeze it before baking. Wrap it well, and it’ll keep for up to 3 months. To bake, skip the thawing and add 20-30 minutes to the baking time for a golden, bubbly casserole.
The other thing is that freezing casseroles can change slightly in the form of texture. It will still taste great; it will just be somewhat softer in texture.

oh my goodness that pic looks so yummy. My mom makes broccoli casserole for Thanksgiving and Christmas too, it is always such a treat!
That looks yummy but very high in fat. (cheese, mayo, Ritz crackers and butter). My mom used to make a broccoli onion one using cream cheese and it was out of this world but of course high fat. Would be okay to occasionally have -everything in moderation.
