These creamy carrots are a vibrant and tasty side dish for any time of year.
The tender carrots are absolutely smothered in a rich and flavorful sauce. Better yet, the creamy sauce pairs beautifully with virtually any meaty main! So, you can serve these tasty carrots for Thanksgiving, Christmas, or Easter!
Now, I’ll be real. I’m not usually the biggest fan of carrots as I sometimes find them a touch too sweet. But I can get on board with these creamy carrots as the rich sauce balances out this vegetable’s natural sweetness. Seriously, I can eat a whole bowlful of these things with Thanksgiving fixin’s.

- Carrots: The star of the show! This delicious veggie is rich in beta carotene, potassium, and vitamin K!
- Water: For cooking the carrots.
- Salt: To taste.
- Sugar: For a delicious sweetness that mellows out the cream.
- Mayonnaise: Full-fat mayonnaise makes the creamiest carrots, but you can substitute it for low-fat.
- Cream: I used 10% coffee cream, but any kind of cream will work equally well for this recipe!
How to Make Creamy Carrots
- Step One: Add water to a large pot and bring it to a boil.
- Step Two: Add the carrots, sugar, and salt, and cover. Cook until the carrots are tender, but still a little firm (usually around 10 minutes).
- Step Three: Drain the carrots and put them into a serving dish.
- Step Four: Start making the creamy sauce by adding mayonnaise and cream to a bowl. Stir to combine.
- Step Five: Add the carrots into the creamy sauce and mix.
- Step Six: Serve hot and enjoy!

These creamed carrots are delicious with virtually any meat dish, but they’re also amazing with Turkey dinners around the holidays!
Recipe Tips and Tricks
- Make sure the mayo and cream are fully incorporated before adding the mixture to the carrots. This helps you avoid lumps and gives your creamy carrot sauce the perfect smooth texture.
- Don’t overcook your carrots. If you cook your carrots for too long, they’ll go mushy. Equally, you don’t want to undercook the carrots or they’ll be too crunchy!
- I don’t recommend mixing the carrots too much after you’ve added the creamy sauce. If you do, they might start to break down and break into clumps.
Variations and Substitutions
- You can replace the carrots with any vegetable you like! Although I love carrots, but green beans, broccoli, and even asparagus can be delicious in this creamy sauce.
- You can replace the regular mayonnaise with low-fat if you want to reduce the calories in this recipe.
Storage Instructions
Any leftover creamy carrots can be put in an airtight container and stored in the fridge for up to 3 days.
They’re technically safe for slightly longer, but they might start to develop a film!
Can I Freeze?
I don’t honestly recommend freezing these creamed carrots as their texture will deteriorate once defrosted.
But you can technically freeze these carrots for up to 3 months in freezer bags or airtight containers if you need to!

Creamy Carrots

Ingredients
- 8 medium carrots peeled and cut into quarters lengthwise
- 5 cups water
- 1 tsp salt
- 2 tsp sugar
- 3 tbsp mayonnaise
- 2 tbsp cream
Instructions
- Add water to a large saucepan and heat to boiling. Add carrots, sugar and salt. Cover. Cook until tender, but still a bit firm, about 10 minutes. Drain and put in serving dish.
- In a small bowl, stir together mayonnaise and cream. Stir into carrots. Serve hot.
