Now, I’m not the biggest fan of peas as I always think they can be a bit boring when served on their own.

I adore serving company peas with meats like beef and chicken. But there’s nothing stopping you from spicing up a nut roast or fish dish with this moreish plate of veggie goodness!

Seriously, the different flavors and textures in these peas will make this a complete staple in your mid-week recipe binder!

    Why You’ll Love Company Peas

    • It makes getting your 5-a-day as easy as pie!
    • Adding Cream of Mushroom soup to the mix gives the peas a deliciously savory and creamy flavor.
    • The slivered almonds and fresh mushrooms offer the recipe plenty of pleasant texture.
    • It jazzes up veggies without much effort (which makes it an awesome side dish for kiddos!).

    • Butter.
    • Frozen peas. You’ll need to cook these first. Just be warned that canned peas may be mushier than their frozen counterparts!
    • Bean sprouts. For a bit of additional crunch.
    • Mushrooms. I love using fresh mushrooms for flavor, but canned would work equally well.
    • Can of cream of mushroom soup. You don’t need to add anything extra like water or milk!
    • Slivered almonds. It’s important to toast the nuts to achieve the signature crunch that puts this salad over the top.
    • Salt and pepper.

    Recipe Tips and Tricks

    • Don’t skimp on the butter for this recipe. I get that it dials up the calories a considerable amount, but it’s responsible for the rich, savory flavor in this dish
    • If you’re dealing with frozen peas, it’s always a good idea to break up any frozen clumps in a saucepan before adding them to other ingredients.
    • Be careful not to add anything extra to the soup. Although it may be tempting to add a splash of water or milk to the mixture, doing this may make your peas too liquidy. This is even more important if you’re working with canned veggies as they’ll naturally retain a touch of water.

    Variations and Substitutions

    • If you’d like to make these company peas even more exciting, why not throw in a few cubes of bacon? They’ll add some savory flavor to the mix without bulking things up too much.
    • I typically use frozen peas for this recipe as it’s the easiest way to go. If you don’t fancy using those, canned or fresh work too!
    • Another amazing addition to this recipe is a can of water chestnuts! Not only do they add tons of texture, but they’re super nutritious too!
    • If you’d like to make this more of a main meal, adding a layer of cracker crumbs will help. They’ll add glorious crispiness to the top, but they’ll also make the whole dish more filling!

    Storage Instructions

These company peas are best enjoyed fresh.

But you can also store them in an airtight container in the fridge for up to 3 days.

Enjoy them cold as a refreshing salad or pop them in the microwave to heat them back up!

    Can I Freeze?

I don’t honestly recommend freezing these company peas as they’ll lose a lot of their structural integrity and texture.
