Hurry Chicken
Hurry Chicken is a fall-off-the-bone tender and juicy chicken that is seasoned to perfection. This recipe is a tribute to my late grandmother, who made this recipe and it always brings back the fondest memories. If you love chicken this is one recipe you can’t pass up making.
In my early 20s, I started cutting out recipes from magazines and pasting them into a scrapbook. I recently was going through my books and discovered that I had a few handwritten recipes that my Grandma June had given me included in the book. My grandma passed away in December 2012 and not a day goes by that I don’t think of her. I miss her so much that it physically hurts. When I saw her recipes in there, I knew I had to make them and share them in honour of her.
Hurry Chicken
Grandma June wrote a little note on her recipe for Hurry Chicken about how her boyfriend and life partner, Clarence, did not like chicken, but he liked her Hurry Chicken. She said she normally uses chicken legs and removes the skin just when they are starting to thaw. She said this recipe will work with whatever chicken you have on hand.

I picked up a package of chicken legs on sale at the grocery store this week and thought it would be perfect for Grandma’s Hurry Chicken recipe. I left the skin on instead of removing it. You can always remove the skin after it’s cooked. This way the flavours and juices stay in the meat.
The chicken turned out beautifully. The meat practically fell off the bone and even John remarked how yummy it was.
I’ll be making Hurry Chicken again not only because it reminds me of my Grandma, but also because it’s an easy and delicious recipe. Enjoy!

What is the Best Cut of Chicken to Use in Hurry Chicken Recipe
To be honest you can use whatever cut of chicken you prefer. I think that bone-in chicken is best as it adds a lot of moisture to the meat as it cooks. Plus meat on the bone always has more flavor than a boneless chicken breast.

How to Make Hurry Chicken
Start by preheating your oven, then in a bowl mix up your ingredients. Place your chicken in a casserole pan, pour the mixture on top, and cover the chicken. Bake in the oven for an hour and a half.
That is all it takes to make this simple but incredible chicken. If you are a mom who has minimal time to spend in the kitchen I highly recommend this dish. Or need to prep dinner and then tackle other tasks around the home, this easy chicken recipe is calling your name.
Can I Double this Baked Chicken Recipe
Absolutely! Just make sure that your pan is large enough to hold all the contents. Then cook accordingly. It should cook in the same amount of time if you don’t overlap the chicken and allow it to be laid out in the pan. If you overlap the chicken too much you will find that some spots might be less done than others.
How to Store Leftover Chicken
For me, I tend to place in sealable airtight containers, vs a sealable bag. I store the chicken in the fridge for up to three days. Warm it up in the oven or microwave for a quick reheat. Or shred the chicken so it is off the bone and use in salads and another type of recipes.
This chicken is just as good as night one when reheated.
Can You Freeze Leftover Chicken
If you don’t plan to eat all of your chicken right away, you could freeze it. Place in an airtight container, sealable bag or vacuum-sealed bag. Then store in the fridge for up to three months.
Take the chicken out and thaw in the fridge the night before you plan to eat it. Then reheat how you would like. If you reheat in the oven make sure to add liquid in and cover the pan. This will help prevent the chicken from drying out as it reheats.
As you can see I have been enjoying this chicken recipe for many years. It might become an instant family favorite in your home as well. The best part of all it is a kid-friendly recipe.

Hurry Chicken
Ingredients
- 4 to 5 chicken pieces I used chicken legs
- ½ cup brown sugar
- ½ cup ketchup
- ½ cup water
- 1 envelope onion soup mix
Instructions
- Preheat oven to 350°F.
- In a mixing bowl, stir together brown sugar, ketchup, water and onion soup mix.
- Place chicken in a casserole dish and pour sauce over top to cover the chicken. Put the lid on the casserole dish and cook for 1 ½ hours.

I have a book with my grandmother’s hand written recipes in it also, but it’s a little less useful. Some of the recipes call for amounts such as “five cents worth of beef”…..
