    How to Make Cauliflower Rice

    You can make it yourself at home with a food processor or a box grater. This post explains how to get the cauliflower into those perfect rice like bits.

    Green Giant also makes a Cauliflower Rice. I found it in the frozen veggie section of my grocery store. You can use a bag of it if you want to save on time.

    How to Make Low Carb Chicken Divan

    The first thing to do is to melt the butter over medium heat. Add in the onions and garlic and cook until softened. Stir in the garlic salt and cauliflower rice.

    Cook until the cauliflower is softened (if using raw cauliflower). If you are using the frozen cauliflower rice, cook it in the microwave first according to package directions. Then, add it in, but you won’t have to make that extra step to cook it like you would if you were using it raw.

    Stir in the chicken broth and cook covered for 10 minutes.

    Stir in heavy cream and lemon juice. Reduce the heat to medium low. Let simmer for 10 minutes.

    Stir in mayonnaise and remove from the heat.

    Add half of the chicken into the cauliflower mixture. Spread the other half of the chicken on the bottom of an 8×8 casserole dish. Top with broccoli. Then top with the cauliflower mixture. Sprinkle on the cheddar cheese.

    Cover the casserole with aluminum foil or a lid and bake for 30 minutes at 350F.

    Remove the cover and bake for an additional 10 minutes. Serve hot. Sprinkle fresh parsley on top if you wish.

    You won’t even miss the carbs! This comforting casserole has a creamy sauce made with chicken, broccoli, cheddar cheese and cauliflower rice.

    Ingredients
     
     

    • 2 boneless skinless chicken breasts cooked and chopped
    • 1 tbsp unsalted butter
    • 1 yellow onion chopped
    • ½ tbsp garlic minced
    • ½ tsp garlic salt
    • 1 cup chicken broth
    • 3 cups cauliflower rice
    • 1 cup heavy cream
    • 1 tsp lemon juice
    • ½ cup mayonnaise
    • 3 cups broccoli steamed
    • 2 cups cheddar cheese shredded
    • 1 tsp fresh parsley chopped, for garnish (optional)

    Instructions

    • Preheat oven to 350°F.

    1. We made this last night – using frozen cauliflower rice – and the end result was soupy. The flavor was amazing – but the entire dish was way too watery. Anybody else running into that? We did double it – because we were cooking for 9.

        Mine was also very watery but w awesome flavor. I noticed , many people said it was a little soupy. I wonder how this problem could be eliminated. Next time I’ll try baking w/o the cover.

      We tried this for dinner tonight – and it was OUTSTANDING!!!  I left out the lemon juice, and I baked for 20 min. without a cover, and it turned out perfectly.  So, so delicious, and definitely going into the menu rotation.  Thanks so much for sharing!!!  (In response to a previous post, I used frozen cauliflower rice.  I cooked the rice via package directions in the microwave first, then added it softened to the mix.  The casserole was watery going in the oven, but not coming out.   Maybe baking without a cover helped to evaporate some of the liquid.  This cut down the cook time, as well!)

      Made this for dinner tonight based on all the reviews!  So glad I did!  Fantastic meal – kids had seconds!!!!  Best part they didn’t know it was cauliflower rice

      made this dish last night and it was delicious. I chose to mix everything together and not layer it, It will surely be a favorite of ours.

    6. I replaced the mayonnaise with 4 oz. cream cheese,. It was delicious!

    7. I saw someone replaced the mayo with 4 oz of cream cheese which is a great idea but would it still be good if I omitted the mayo or cream cheese altogether?

    8. Do you use fresh broccoli and steam it, put it in raw?   Use frozen and microwave? Directions aren’t as clear with broccoli as they are with cauliflower.

    10. This was really good and very filling! I used the frozen cauliflower rice and drained it for any excess water.  Also after 10 minutes with the broth, I turned up the heat and cooked it for a few more minutes to let it evaporate a little more. I just didn’t want it soupy. I did the same thing after simmering the cream. I then used a rotisserie chicken because it’s easier and fresh broccoli in a steam bag. It came out perfect! I broiled it for a few minutes as well because I like the cheese crispy. Will def make again!
