I’m happy to say my Christmas shopping is almost done! I’m ahead of the game this year. I’m doing quite a bit of my shopping online so I’m just waiting for all my orders to arrive. Let’s just the delivery people know me well. I couldn’t resist all those Black Friday sales! What’s left to do is decorate the house and put up the tree (I’m late this year) and finish planning my holiday menu. Oh and maybe do some Christmas baking….
I make a lot of casseroles over the holidays. I like that they are easy to whip up and you can be a little creative with the ingredients. It’s pretty hard to mess up a casserole unlike baked goods. Casseroles usually always turn out delicious.

Egg casseroles are one of my favourite casseroles to make. I’ve been using Burnbrae Farms Egg Creations to make a variety of casseroles. Call it my holiday experimenting! My most recent success was this Bacon, Spinach & Mushroom Crustless Quiche using Burnbrae Farms Egg Creations Whole Eggs Mushroom & Spinach. It’s a keeper that I’m adding to my recipe box.
Though I love traditional quiche, I’m not crazy about the carbs in the crust. The low carb answer was a crustless quiche. I’ve made them before using shelled eggs, but wanted to see what it would be like using Burnbrae Farms Egg Creations. I had bought a bunch at Walmart and was eager to try them out.
The Egg Creations are “spruced up with mushrooms and spinach” so I knew that I wanted to include those two ingredients. Bacon was an obvious edition. Because bacon. Then I added some onions and loads of cheddar cheese. I fried the onions, mushrooms and spinach in the bacon grease to give them an extra boost of flavour.
It bakes for 40 minutes in the oven. You could also prep the night before and put it in the fridge overnight. In the morning, pop it in the oven to bake. You can tell when it’s done because it won’t be jiggly. I checked the quiche at 30 minutes and it was still sloshing around so I knew it needed more time.
It’s best served hot and fresh from the oven. Each bite is pure yum with the melted cheese, creamy eggs and flavourful veggies. This is a breakfast to remember.
This is a fantastic recipe to serve if you have company visiting. I typically serve breakfast casseroles when we have visitors because they are so easy to make and you can do a lot of the prep ahead of time.

What ingredients will you add to your breakfast casserole?
Bacon, Spinach & Mushroom Crustless Quiche
Ingredients
- 2 cartons Burnbrae Farms Egg Creations in Mushroom & Spinach 500g cartons
- 13 slices bacon
- 4 cups baby spinach
- 4 cups white button mushrooms sliced
- 1 sweet onion chopped
- ⅓ cup sour cream
- 2 cups cheddar cheese shredded
- fresh parsley for garnish, if desired
Instructions
- Preheat oven to 325°F. Grease a 9×13 inch casserole dish.
- Cook bacon until crispy. Remove from heat. Drain bacon fat saving 1 tbsp in the pan. Crumble bacon once cooled.
- Heat pan to medium heat. Cook onions for 3 to 4 minutes, until softened. Add mushrooms and cook an additional 3 to 4 minutes. Add spinach and cook 3 to 4 minutes, until wilted. Spread mixture in the casserole dish.
- Stir together Burnbrae Farms Egg Creations in Mushroom & Spinach and sour cream. Pour into casserole dish. Top with bacon and cheese.
- Bake for 40 minutes. Serve hot.
