I was at our local grocery store’s produce section yesterday and saw their display of fresh locally grown vegetables.

They looked so fresh and delicious that I grabbed a bunch.

Today I whipped up this simple and quick meal with all the fresh veggies and some ground beef and all in one pan so less mess to clean.

    Of course! I would call this a clean out produce drawer dinner. It is the perfect way to use up produce that is close to expiration! 

    Create a recipe that the whole family can enjoy. Cook your veggies till they reach their desired tenderness you before and serve it up!

    This recipe is one that can be a meal in one. It’s loaded with protein and veggies! But if you want more pair with any of your favorite sides.

    What Can I Substitute for Ground Beef

    You are welcome to use ground turkey or even ground pork or chicken. Just make sure to fully cook your meat and then toss in all the veggies. 

    We love ground beef in our home but I am sure any other ground meat will be pretty tasty as well.

    How to Make Garden Vegetable Beef Skillet

    In a skillet, you will want to cook your ground beef and diced onions until meat is no longer pink. 

    Mix in your veggies and spices and cook for around another ten minutes or until vegetables are to your tenderness preference.

    Can You Cook Ground Beef and Vegetables Together

    You will want to cook your ground beef up first. I tend to cook my onions at the same time and once the beef is fully cooked and onions are tender I toss in the other ingredients. 

    While it is safe to cook ground beef and vegetables together, I find the texture of the veggies are so much better if they cook for a less amount of time. 

    If you prefer a more tender veggie then you can toss it all in at once and cook together. You will find the veggies will break up a bit more than if you tossed and stirred at the end. 

    How to Store Leftover Garden Vegetable Beef Recipe 

    You can toss the mixture in an airtight container and then store it in the fridge for up to three days. The ground beef is what will make this go bad faster. If you did this with just vegetables it would store for up to five days.

    Does Garden Vegetables and Beef Freeze 

    You will find that the veggies will break down quite a bit when they thaw from being frozen. I recommend only making what you think you will eat before it goes bad. It is great for meal prepping for a few meals, but it just doesn’t freeze well. 

    Can I Double this Skillet Ground Beef Recipe

    Absolutely. If you are wanting to make a larger batch, just make sure your pan can hold the contents! Just cook up the meat and onions and then toss in the rest and cook until ready to serve.

    What To Serve With This Ground Beef Recipe 

    • Dinner Rolls or homemade bread
    • Side Salad or Chopped Salad
    • Pasta salad or cold salad recipe 

    As you can see the sky is the limit. Most of the time this is a meal in one for us. But, on occasion, I will whip up a side or two to pair with it. Feel free to add whatever sides you enjoy the most if you want more than just this.

    A one pan meal made with fresh veggies, spices and ground beef! Dinner is served in less than 30 minutes.

    Ingredients
     
     

    • 1 lb ground beef
    • 2 cups green beans
    • 1 zucchini chopped
    • 2 tomatoes chopped
    • 2 cups white button mushrooms sliced
    • 1 yellow onion chopped
    • 1 tsp dried oregano
    • salt & pepper to taste

    Instructions

    • Cook ground beef and onion in a skillet over medium heat until beef is no longer pink.
    • Mix in vegetables, oregano and salt & pepper. Continue to cook over medium heat for about 10 minutes.
    • Remove from heat and serve hot.

    2. Hi, Stacie, I made this and my whole family loved it. We are on the keto diet. What I’m wondering, is how 185mg of carbs, can this be keto? Even subtracting the fiber.

      The recipe sounded like a good idea. However, just oregano, salt, and pepper seemed a bit bland. I added minced garlic, garlic salt, paprika, parsley, and a small sprinkling of celery salt, it was very good and still keto. Seasonings really make the difference between a diet food and something you would be happy to fix even if not on a diet. I have a stubborn husband ordered to switch to low carbs and if there is little flavor, well…. LOL! Thanks for the recipe. I will definitely be cooking this again.
