    Ingredients
     
     

    • 1 cup sugar
    • ½ cup unsweetened natural cocoa powder
    • ¼ cup vegetable oil
    • 2 large eggs
    • 1 tsp vanilla extract
    • 1 cup all-purpose flour
    • 1 tsp baking powder
    • ¼ tsp salt
    • ½ cup powdered sugar

    Instructions

    • Add sugar, cocoa powder, vegetable oil, eggs and vanilla to a large mixing bowl. Whisk until combined.
    • Add the flour, baking powder and salt to the mixing bowl and whisk together until combined. Do not overmix.
    • Cover the bowl in plastic wrap. Chill in the refrigerator for 2 to 48 hours.
    • When ready to bake, preheat the oven to 350℉. Place parchment paper or silicone mats on a cookie sheet.
    • Remove the chilled dough from the fridge. Divide into 1 tablespoon balls for a small cookie OR 2 tablespoon balls for a large cookie.
    • With clean hands, roll the cookie dough into balls. Roll in a bowl of powdered sugar and place on a cookie sheet spacing them about 2 inches apart.
    • Bake for 12 to 14 minutes. Remove them from the oven while the centers of each cookie are slightly underdone.
    • Let the cookies cool on the cookie sheet for 10 minutes. Transfer them to a wire cooling rack to cool completely.
