Cabbage Roll Soup Recipe

Cabbage Roll Soup is hearty and comforting! This delicious and easy slow cooker soup recipe is loaded with tender cabbage, ground beef, oregano, garlic, and tomatoes. Everything you love about a cabbage roll, but 100 times easier to make. Yum!

Crockpot cabbage roll soup is perfect for people who love cabbage rolls but don’t have the time (or patience) to make them. Because, let’s face it, they aren’t easy!

It’s been a while since I’ve used cabbage in our meals. It’s not that I don’t like cabbage; I do enjoy it. It’s just that my favorite recipes don’t use it as a main ingredient.

I’ve made cabbage rolls, which were the first thing I thought of making this week. The recipe I like is for unrolled cabbage rolls made with ground turkey. My aunt makes the best cabbage rolls, and hers are perfectly rolled. When I tried her recipe, they did not turn out as pretty!

    It’s also made in the slow cooker, which saves me from slaving over the stove all day. It’s slow cooker weather right now, anyway, and this soup is perfect for a frosty day.

    • Ground beef
    • Worcestershire sauce
    • Salt
    • Paprika
    • Yellow onion
    • Garlic
    • Water
    • Dried oregano
    • Dried basil
    • Tomato sauce
    • Diced tomatoes

    How to Make Cabbage Roll Soup

    Follow along to learn how to make cabbage roll soup. Your house is going to smell so good!

    • Step One: Add onion, garlic, Worcestershire sauce, paprika, ground beef, and salt to a skillet on medium heat. Cook until the ground beef is browned (about 7 to 10 minutes).

    • Step Two: In a 6-quart slow cooker, add cabbage, oregano, basil, tomato sauce, diced tomatoes, water, and the ground beef mixture and stir to combine.

    • Step Three: Cover and cook on low heat for 8 to 10 hours.
    • Step Four: In the last half hour of cooking, cook the rice according to the package directions. Add the cooked rice to the slow cooker and stir to combine.

    How to Make on the Stovetop

    1. Use all the same ingredients and measurements. Start by cooking the ground beef, onions, and garlic in a large pot over medium heat. 
    2. Once the ground beef is cooked, add the rest of the ingredients except the rice. Bring to a boil, then reduce the heat to medium low. Simmer for 1 hour. 
    3. Add in the cooked rice before serving.

    What to Serve with It

    Though Cabbage Roll Soup is filling on its own, it’s always nice to have something a little extra to enjoy it with. Try a buttered dinner roll to sop up all that delicious savory broth. It’s also yummy with a grilled cheese sandwich for a satisfying lunch.

    • Sour cream – Makes the soup creamy if you swirl it around!
    • Fresh herbs – Chopped parsley, dill, or cilantro for a fresh, bright flavor.

    Storage Instructions

    How to Make Low Carb

    Easy peasy! To make Cabbage Roll Soup a low-carb meal, just omit the rice. It’s not that big of a deal, and you’ll still have the same delicious flavors. Rice will not make or break this soup recipe.

    • 4 cups cabbage roughly chopped
    • 1 lb lean ground beef
    • 1 tsp Worcestershire sauce
    • 1 tsp salt
    • 1 tsp paprika
    • 1 yellow onion chopped
    • 3 cloves garlic minced
    • ½ cup water
    • 1 tsp oregano
    • ½ tsp basil
    • 3 cups tomato sauce
    • 1 can diced tomatoes 28oz can
    • 1 cup white rice uncooked

    1. Can I cook on high to speed up time or on stovetop?

      1. Yes, just watch to make sure the cabbage is cooked and you should be fine!

        1. will minute rice do, or have to be long grain?

          1. The rice goes in at the end so it doesn’t matter what kind you use. I’ve made it with Minute rice before.

            1. Can you add the uncooked rice at the beginning? And allow the rice to cook with the rest?

      This looks delicious! I love stuffed cabbage and soup so this put together can only be fantastic.

    4. Its in the crockpot right now! My family recipe for stuffed cabbage calls for a handful or two of barley in the sauce, as well as rice in the meat mixture. So, instead of adding cooked rice later, I dumped a couple handfuls of barley into the crockpot with everything else. Otherwise I followed the recipe exactly. I can’t wait for dinner!

    11. This is so easy and so yummy. It’s in my crock pot today for the second time, we love it. The hardest part of this recipe is chopping the cabbage!
      You’ll notice that after you’ve chopped 4 cups worth of cabbage, there is quite a bit left over. What I do with the extra cabbage: fry it with lots of pepper and butter in the pan you used to brown the meat. Fry until browned and wilted. This will reduce it enough to add the rest to the pot. Not the healthiest addition, but man, does it pack a nice flavor! I do eat some of the fried cabbage lol

Hi Sara, a favorite in our family is cabbage and noodles (halushki) .Melt butter in skillet and add chopped cabbage and onions, prepare wide egg noodles or bow tie pasta according to package directions. When cabbage and onions are cooked down add cooked noodles or bow tie pasta and mix together. At this point sometimes I add a little more butter, if needed. This is delicious and even more so if some of the onion bits are browned….mmmmm.
        Our family loves this and it is a mainstay at parties prepared and placed in crockpot to keep warm.
        I usually use a whole head of cabbage for this dish.

        1. A family favorite for us too, and prepared exactly the same way (except we always use bow ties). Hungarian comfort food!

        2. Oh my goodness, someone else who knows what Halushki is my grandmother used to make this and I make it those days I just need some comfort food.

      I like the sounds of this, reminds me of the stuffed cabbage my mom made and yet this would be much easier to make

    15. Tried this recipe tonight with a couple small changes. I added a teaspoon of pepper and since I forgot to pick up tomato sauce I used Bloody Mary mix. It turned out fantastic. I have saved this recipe for future use.

      Love to find new slow cooker recipes! Cabbage rolls are a fave…but I used to eat them with a little ketchup…which I don’t even have in the house anymore. Cabbage is on my list for next trip to the grocery store!
