    Ingredients
      

    • 2 tbsp extra virgin olive oil
    • 2 celery stalks diced
    • 1 sweet onion diced
    • 1 carrot peeled, cut into half moon slices
    • 1 cup potato peeled and cubed
    • 1 cup green beans trimmed, cut into 1-inch pieces
    • 1 cup zucchini chopped
    • 4 cloves garlic minced
    • 1 tsp dried thyme
    • 1 tsp Italian seasoning
    • 1 tsp salt
    • ½ tsp black pepper
    • 4 cups vegetable broth
    • 1 can diced tomatoes 28oz can
    • 1 cup peas
    • 1 cup corn
    • 1 tbsp tomato paste
    • 2 bay leaves
    • 1 tbsp white wine vinegar

    Instructions

    • Heat the olive oil in a Dutch oven or large pot over medium heat. Add the celery, onion, carrots, potatoes, green beans, zucchini, garlic, dried thyme, Italian seasoning, salt and black pepper. Stir. Cook for 5 to 6 minutes, until the onions are softened, stirring occasionally.
