This chicken bruschetta recipe is the easiest thing you’ll ever make for dinner (especially if you have some leftover cooked chicken in the refrigerator). It’s ready in 2-3 minutes. And it doesn’t just taste delicious, but it looks fancy, too. 

It’s a simple recipe that looks (and tastes) like something you’d order at an Italian restaurant. Sweet diced tomatoes and tangy balsamic vinegar are lightly drizzled over the chicken. The dish has so much flavor that it upholds the saying, “Less is more.”

    How to Make Bruschetta Chicken

    • Step One: Combine tomatoes, garlic, olive oil, balsamic vinegar, and fresh basil in a medium bowl. 
    • Step Two: Spoon the tomato mixture over top of cooked chicken breast. Refrigerate any leftover bruschetta.

    Variations and Substitutions

    • Sprinkle with parmesan cheese. This will add slightly nutty flavors to the chicken. 
    • Add Italian seasoning to the chicken. Season it with your favorite spice blend. 
    • Make Bruschetta chicken pasta. It’s topped with lots of melty mozzarella cheese and is super popular with kids. 
    • Garnish with fresh herbs. Fresh parsley will taste perfect with the basil. 
    • Replace balsamic vinegar with a balsamic reduction. 
    • Top with diced red onion. This is a very pungent onion, so use just a little bit. 

    Storage Instructions 

    Store the cooked chicken in the fridge, covered in an airtight container, for up to 3 days. I suggest storing the bruschetta mixture separately from the chicken so they both taste the best a few days later.

    • Use your favorite type of tomatoes. Either cherry tomatoes or Roma tomatoes will work perfectly. 
    • Cook the chicken fresh and season it with garlic powder and onion powder. 
    • If you’re reheating cooked chicken breasts, heat them in a grill pan over medium-high heat or in the microwave and cover them with paper towels. 

    What is Bruschetta? 

    Bruschetta is an Italian food that describes small pieces of grilled bread topped with something, but most often some tomatoes and fresh herbs. A homemade bruschetta is easy – sliced Italian bread toasted and topped with tomatoes, dressing, and herbs.

    My chicken bruschetta is the same, but I replaced the bread with chicken breasts. 

    Can I Substitute the Chicken Breasts?

    Yes, you can substitute the chicken breasts with other types of chicken. It will taste delicious with chicken thighs or chicken cutlets. You can also serve the bruschetta topping on pork chops marinated in Italian dressing.

    What is the Best Way to Cook Chicken Breasts?

    I prefer to cook the chicken in a large skillet, but some people like to add it to a slow cooker for a few hours. 

    To cook the chicken breasts, I season them with my favorite spices and place them in a skillet with some extra virgin olive oil over medium heat. 

    How Do You Know When Chicken is Fully Cooked? 

    You will know it’s fully cooked when the internal temperature is 165F.

    • 4 boneless skinless chicken breasts baked
    • 3 plum tomatoes chopped
    • 2 cloves garlic minced
    • 1 tbsp extra virgin olive oil
    • 1 tsp Balsamic vinegar
    • 1 tbsp fresh basil chopped

    Instructions

    • In a medium bowl, combine tomatoes, garlic, olive oil, balsamic vinegar and fresh basil. Spoon over top of cooked chicken breast. Refrigerate any leftover bruschetta.
