Honey Dijon Chicken

- Boneless, skinless chicken breasts
- Dijon mustard
- Honey
- Extra virgin olive oil
- Curry powder
- Paprika
How to Make Honey Dijon Chicken

- Step One: Preheat oven to 375°F. Line a baking sheet with aluminum foil. Place chicken breasts on the baking sheet.
- Step Two: In a small bowl, mix together Dijon mustard, honey, olive oil, curry powder, and paprika. Brush the mixture over both sides of the chicken breasts.
- Step Three: Bake for 35 – 45 minutes, or until chicken breasts are cooked to a proper internal temperature of 165℉.
- Step Four: Serve hot with side dishes of your choice.

Variations and Substitutions
- Try a different type of chicken. Bone-in chicken cooks differently, so you will need to adjust the cooking time. Drumsticks, chicken thighs, and all would be great. The cooking time will vary depending on the thickness of the chicken.
- Change the mustard. Wholegrain mustard can be used instead of Dijon.
- Swap the honey. Try maple syrup or another sweetener instead of honey.
- Make it spicy. Add a little cayenne pepper for a hint of spice.
Storage Instructions
You can store your cooked chicken in the fridge for up to three days.
You can reheat the leftovers in the microwave or cover them with aluminum foil and warm them in the oven. I have also just sliced up the chicken cold and then topped a salad with it, and it is fantastic that way as well.
Can I Freeze?
Yes, you can freeze this recipe for up to three months—place in an airtight container, freezer bag, or vacuum-sealed container.
Thaw in the fridge the night before you plan to heat it. You can then choose to reheat in the microwave or oven or eat it cold.
How to Know When Chicken is Done
You will know when your chicken is done, and the juices run clear. You use a meat thermometer, and the chicken is at 165°F internal temperature.
When you use a meat thermometer, stick it in the largest piece of the chicken, and don’t touch a bone if you use bone-in chicken.

- 1 ½ tsp curry powder

I liked the marinade ingredients which I had on hand and thought they sounded really tasty together but only had thin-sliced chicken cutlets. I modified the cooking time and was finished in about 20-25 minutes. I wasn’t a fan as to the way the chicken looked after cooking – I did put it under the broiler for a few minutes but that still didn’t make it more appealing to look at. My husband and I did think it tasted good but we both thought maybe some cheese scattered over the top would have made the chicken prettier to look at and (my opinion only) a bit tastier.
