I’ll admit that I don’t often cook with pork very often. It’s not that I don’t like it. I do. It’s just not my favorite protein to eat. My fiancé, Matty, loves pork chops so I’ve been adding them to our dinner rotation more often than before. Gotta keep my man fed and happy!
My sister gave me this recipe for Savory Pork Chops from her mother-in-law. I’d asked her for meal ideas and she said it’s a recipe that her family enjoys. I liked all the ingredients so I figured I’d give it a shot and see if it met Matty’s approval.
Good news. It did!
I like that it’s an easy meal to put together in one pot. Love my one-pot meals! It simmers for 30 minutes so I can clean up the kitchen. I like to tidy up during the meal prep so I don’t have a huge disaster waiting for me after dinner.
I know a lot of people aren’t olive fans. If you despise olives like Matty’s son, Davis, then leave them out. No biggie. I personally LOVE olives. I eat them as midday snack a few times a week. Yum!

So what do you need to make Savory Pork Chops? Easy to find ingredients! I live in a small area so I can’t have anything too fancy schmancy in a recipe.
- Pork chops
- Vegetable oil
- Green pepper
- Black olives
- Fresh parsley
Why Add Sugar to Tomato Sauce
You’ll notice that I have sugar listed as one of the ingredients. It might seem weird since this is a savory dish. However, the sugar is added to bring balance to the acidity of the tomatoes. Adding a little sweetness to the recipe helps tone down the acid.
How to Make Savory Pork Chops
Start by adding vegetable oil to a large skillet over medium high heat. Add the pork chops and brown both sides. Add in the tomatoes, garlic, green pepper, onion, sugar, sage, salt and pepper.
Cover the skillet and cook over medium heat for 30 minutes or until pork chops are fully cooked.
Stir in black olives and parsley. Cover again and cook for another 10 minutes. Serve hot.

What to Serve with Savory Pork Chops
Though you could just serve this dish on its own and be fine, why not add a side dish to sop up the delicious sauce?
Try either pasta or rice. I prefer rice since I find it soaks up the sauce better.

- 1 tbsp vegetable oil
- 5 small tomatoes, cut into wedges
- 2 garlic cloves, minced
- 1 green pepper, thinly sliced
- 1 onion, thinly sliced
- 1 tbsp sugar
- 1/4 tsp sage
- 1/2 tsp salt
- 1/8 tsp pepper
- 1/2 cup black olives
- 2 tbsp parsley, chopped
