Greek Chicken Salad

Baby, it’s a heat wave! If I’m being entirely honest, I can’t say I’m loving this weather. It’s insanely hot outside to the point that I’m covered in sweat after a minute of being outside. I’ve never been a heat lover. Give me 17°C weather instead, please.
Because of the crazy heat, I’ve been avoiding the oven all week. My daughter made pizza the other night in the oven and it brought my house up 2 degrees. Ugh. My air conditioning is working hard enough and doesn’t need the added heat in the house.
Greek Chicken Salad
So instead of using the oven to cook meals, I’ve been finding alternatives. This mouthwatering Greek Chicken Salad is perfect for those hot summer days. It’s fresh, delicious and simple to whip up. It’s also large enough to feed a group of people. Olivia frequently has friends over and they are always hungry.
You might be thinking, but don’t you have to cook the chicken in this salad? Yes, you do, but I have a tip. Use either leftover chicken OR buy a prepared rotisserie chicken at the grocery store. Let them heat things up instead!

What’s great about this easy salad recipe is that it’s ginormous. You’ll either have lots of leftovers so you can outlast the heat wave or you can feed a crowd. Either way, it’s a win-win.

How to Make Greek Chicken Salad
It doesn’t take long, but it involves lots of chopping. Grab the biggest salad bowl you own and add all your prepped ingredients. This salad is made with romaine lettuce, chicken, cherry tomatoes, English cucumbers, Feta cheese, black olives, red onion and green pepper.
The dressing is also easy to whip up. In small bowl, add extra virgin olive oil, lemon juice, red wine vinegar, minced garlic cloves, dried oregano, salt and pepper. Whisk together until the oil and vinegar is emulsified. Pour over the salad and toss together to cover.

What do you cook during a heat wave?
- 1 head Romaine lettuce, chopped
- 2 cups chicken, chopped
- 1 cup cherry tomatoes, halved
- 1/2 English cucumber, chopped
- 1 cup Feta cheese, cubed
- 1/2 cup black olives
- 1/2 red onion, chopped
- 1 green pepper, chopped
- 1/2 cup extra virgin olive oil
- 2 tbsp lemon juice
- 2 tbsp red wine vinegar
- 2 cloves garlic, minced
- 1/2 tsp dried oregano
- salt and pepper, to taste
- Toss romaine lettuce, chicken, tomatoes, cucumbers, Feta cheese, black olives, red onion and green pepper in a large salad bowl.
- In a small bowl, whisk together olive oil, lemon juice, red wine vinegar, garlic, oregano, salt and pepper. Pour over salad and toss to combine. Refrigerate uneaten portions.
