I’d been craving sweet potato fries and was looking online for some new recipes to try. I ended up finding this recipe for Sweet Potato Home Fries on my iPhone via the Food Network Canada app. There’s a ton of recipes on there!

This one has only three ingredients: bacon, sweet potatoes, and green onions. It’s made entirely on the stove top and the potatoes are cooked in the bacon drippings giving it so much flavor.

    You are welcome to peel your sweet potatoes or leave them on. I find the skins offer a nice texture to the recipe, but if you prefer the peels to be removed, by all means, take time to peel your potatoes. 

    How to Serve Sweet Potato Fries 

    The beauty of this recipe is the versatility. You can make these sweet potatoes as a breakfast dish, pair with dinner, or eat alone for a light meatless lunch! Let me share some ways I enjoy making this recipe. 

    • Pair with an Egg dish (over easy or scrambled), sausage, or bacon for breakfast. 
    • Serve as a side next to Meatloaf
    • Pair next to your favorite chicken Recipe
    • Or eat alone!

    How to Make Sweet Potato Home Fries 

    First, you want to start by cooking up your bacon in a skillet until it reaches the desired doneness you like. Remove from pan and place on a paper towel to soak up excess grease. 

    Then in the same pan, toss in your diced sweet potatoes. Brown them on all sides and cook until they are nice and tender, this takes around 15to 20 minutes. 

    Once potatoes are done you will add in your diced bacon, green onions and then salt and pepper to taste. Blend well and then serve right away.  

    Can I Add Onions and Peppers to Sweet Potato Home Fries 

    Yes, if you want this to be more flavorful and filling feel free to toss in your peppers and onions about 5 minutes after you began cooking your sweet potatoes. This will give them time to tenderize and soften a bit. Just dice them up small and mix in. 

    Tip for Making Sweet Potato Home Fries 

    One of the biggest tips I will share is to make sure you do your best to get your potatoes similar in size when you go to dice them up. This is going to help with an even cooking time for the potatoes. If you hurry up and chop them and they are different in size you will find some could have used more time in the skillet where others are charred or overcooked.

    Best Way to Store Leftover Home Fries 

    Take your leftover home fries and place them in the fridge in an airtight container. The sweet potatoes will lose that crispy texture once they are stored in the fridge. You can keep your home fries in the fridge for two to three days. After that they will become soggy enough you will want to toss out leftovers. 

    Best Way to Warm Up Leftover Sweet Potato Home Fries

    The microwave or skillet is your best option in terms of reheating. The microwave will give you a more tender texture whereas the skillet will help to crisp the potatoes up again.

    The best side dish for brunch, lunch, or dinner! This roasted sweet potato hash is filled with salty bacon and garnished with fresh green onions.

    Ingredients
     
     

    • 6 slices bacon chopped
    • 2 sweet potatoes unpeeled and chopped into 1 inch chunks
    • 4 green onions thinly sliced
    • salt & pepper to taste

    Instructions

    • Heat a saute pan over medium high heat and add the bacon. Saute until crispy. Remove from pan.
    • Add the sweet potatoes to the same pan.  Brown them on all sides until tender (about 15 minutes or so).
    • Toss in bacon, green onions and salt & pepper.
