Slow Cooker Beef Enchilada Casserole

All the flavor of enchiladas, but in an easy to make slow cooker casserole recipe. This cheesy comfort food is the perfect family meal with layers of beef, cheese, tortillas and enchilada sauce. Serve this Slow Cooker Beef Enchilada Casserole for Taco Tuesday!

If you’re looking for a simple recipe with loads of flavor, this crockpot enchilada casserole is it! It’s packed full of hearty ingredients with layers of tortillas, beef, veggies and Mexican flavors. 

Slow cooker recipes are my jam. I love the minimal prep time and then you let the slow cooker do all the hard work. This recipe takes about 5 hours to cook and makes your house smell so good. I love coming back home and having dinner all ready to eat!

Ingredients

  • Ground beef – I like to use lean ground beef.
  • Yellow onion
  • Salsa – Use mild, medium and hot depending on your heat tolerance. Try my garden salsa.
  • Diced green chilies – Use a can that you’ve drained the liquid from.
  • Taco seasoning – You can also use your own homemade taco seasoning.
  • Red enchilada sauce – You can also use homemade enchilada sauce.
  • Corn tortillas
  • Cheddar cheese – Shred your own cheese. I find the pre-shredded cheese melts funny.

How to Make Slow Cooker Beef Enchilada Casserole

  • Step One: In a large skillet over medium heat, spray with cooking spray and add the ground beef. Cook the beef until browned, crumbled and cooked through.
  • Step Two: Add onions to the beef and cook for 2 to 4 minutes, until softened. Stir in the salsa, diced green chilies and taco seasoning and remove from heat.

  • Step Three: Spray a 6 quart slow cooker with cooking spray. Pour ¼ cup of the enchilada sauce into the bottom of the slow cooker. 
  • Step Four: Add 4 tortillas to the bottom of the slow cooker (tearing if needed to spread evenly), and top with ⅓ of the meat mixture, ⅓ cup of the enchilada sauce, followed by ⅓ of the shredded cheese. Repeat with two more layers.

  • Step Five: Place the lid onto the slow cooker and set to high for 2 to 3 hours or low for 3 to 5 hours.
  • Step Six: Allow to cool slightly before serving and garnish with your favorite toppings like sour cream, cilantro and hot sauce.

    Variations and Substitutions

    • Swap out the ground beef for ground turkey or ground chicken
    • Can’t find enchilada sauce? Use taco sauce in its place. Tomato sauce can also be used in a pinch.
    • Switch out the cheddar cheese for Monterey Jack cheese.
    • Add some beans to the mix! Try black beans or refried beans.
    • Add some jalapenos for a little kick of heat.

    Storage Instructions

    Store any left enchilada casserole in an airtight container in the fridge for up to 3 days. 

    You can also freeze it in a freezer safe container for up to 3 months.

    Can I Use Flour Tortillas Instead?

    Soft corn tortillas are traditionally used in beef enchilada casserole. I find they have more flavor over their flour counterparts. However, you can use flour tortillas if that is all you have available.

    • 1 lb ground beef
    • 1 medium yellow onion diced
    • 1 cup salsa
    • 1 can diced green chilies (4.5oz) drained
    • 1 tbsp taco seasoning
    • 1 can red enchilada sauce (10oz)
    • 12 corn tortillas
    • 2 cups cheddar cheese shredded

    Instructions

    • In a large skillet over medium heat, spray with cooking spray and add the ground beef. Cook the beef until browned, crumbled and cooked through.

      I love your idea of making enchiladas in the slow cooker.

    2. My husband asked for Enchilada Casserole so I found this recipe for a slower cooker. Good for me!! So I fixed it and when he finished I asked him how it tasted. He told me not to lose this recipe!!

    3. When do you add the rest of the enchilada sauce? I’m only seeing the quarter cup at start.

      1. Oh my thank you for bringing that to my attention! I’ve updated the recipe. It goes on after the beef mixture (1/3 cup per layer).

    4. Made this and made the enchilada sauce. My husband loved it. I was pleased with the outcome as well. I topped it off with sour cream and salsa.

    5. If I’m making triple the recipe, will it fit in the slow cooker still?

      1. It will depend on how big your slow cooker is. If it’s a larger sized crockpot, you should be ok.
