Slow Cooker Chicken Lo Mein
Ingredients
- 1 lb boneless skinless chicken breasts
- 1 cup matchstick carrots
- 1 red pepper sliced
- ⅔ cup lite soy sauce
- ½ cup hoisin sauce
- 2 tbsp oyster sauce
- 4 tbsp brown sugar
- 4 cloves garlic minced
- ½ tsp red chili flakes
- 8 oz sugar snap peas
- 2 green onions chopped
- Sesame seeds optional
- 14 oz lo mein noodles
Instructions
- Place the chicken breasts at the bottom of a 6 quart slow cooker. Add the carrots and red peppers on top.
- In a mixing bowl, whisk together the soy sauce, hoisin sauce, oyster sauce, brown sugar, garlic and red pepper flakes.
- Pour the sauce over the chicken and veggies.
- Cover and cook on LOW for 6 hours or HIGH for 4 hours.
- 15 minutes prior to serving, remove the chicken from the slow cooker and shred with two forks.
- Add the shredded chicken back to the slow cooker along with sugar snap peas. Stir to combine.
- Cover and cook an additional 15 minutes.
- Cook the noodles according to package directions. Drain.
- Add the noodles to the slow cooker and toss to coat.
- Sprinkle on green onions and sesame seeds for garnish. Serve hot.
