Pineapple Oatmeal Scotchies
Pineapple Oatmeal Scotchies are delicious cookies with a tropical twist! These soft, chewy treats are filled with oats and butterscotch for an amazing homemade dessert in a snap.
These Pineapple Oatmeal Scotchies are a perfect year-round cookie! As someone obsessed with butterscotch AND oatmeal cookies, this recipe was bound to make it to my blog. They are chewy, moist and really easy to make.
I was curious to see if the pineapple would overpower the flavour of the butterscotch, but was pleasantly surprised it didn’t and added a slight sweetness to it! When you bite into one, the first flavor you’ll taste is definitely the butterscotch before the nuttiness of the oats and the touch of cinnamon.

Ingredients
- Crushed pineapple
- Butter
- Brown sugar
- Egg
- Rolled oats
- Flour
- Baking powder
- Cinnamon
- Salt
- Butterscotch chips

- Baking sheets: Nonstick baking sheets are a must for sheet pan dinners and the perfect homemade cookies. These cookie sheets are an array of sizes for baking and roasting everything you can imagine.
- Mixing bowls: I prefer using glass mixing bowls and these have been my go-to for years. My kids love looking inside them while I’m baking!
- Stand mixer: You don’t have to be a professional to enjoy a stand mixer! This delightful machine makes baking a breeze and can do tons of other things like knead bread, roll pasta, and cut zoodles!
How to Make Pineapple Oatmeal Scotchies
- Preheat oven to 375ºF and prepare baking sheets with a light coating of cooking spray or parchment paper.
- In a large bowl, beat together butter and brown sugar with an electric mixer (I use my KitchenAid Mixer) on low speed until light and fluffy. Add in the egg and beat on low until combined.
- Mix together dry ingredients in a large bowl. Gently fold in pineapple and butterscotch chips.
- Drop two Tbsp of cookie batter onto the prepared cookie sheet and flatten the cookies slightly with the back of a spoon. Repeat these steps with dough at least 2 inches apart.
- Bake for 15 to 20 minutes or until browned on edges. Cool on a wire rack before serving.
This recipe makes about 2 dozen jumbo cookies or 3 dozen regular-sized oatmeal scotchies, making this perfect for bake sales or holiday gifts! You can easily cut the recipe in half if needed.
What is a Scotchie?
If you don’t know what a Scotchie is, you’re not alone! I told my friend I was making these and she looked at me quite puzzled.
A Scotchie is simply a cookie that contains two important ingredients: oatmeal and butterscotch. That’s a winning combination if I do say so myself!
Beyond that, you can add any mix-ins you’d like! And if you don’t like pineapple, just leave it out and make a batch of regular ol’ Oatmeal Scotchies.
How to Store
Cookies are some of my favorite things to make because when stored right they last so long!
Oatmeal cookies on average can last TWO WEEKS in an airtight container on your countertop. After a week, they may be a bit harder than the originals but can be softened in the microwave in just a few seconds.
Want to keep Pineapple Oatmeal Scotchies longer? Freeze them! These cookies will last up to 2 months in the freezer. To thaw, simply leave at room temperature for a few hours and done!
