Spring is in the air? Or is it? I thought it might be with the milder temperatures we’ve been having. The snow was pretty much melted in my driveway except for a few stubborn shady spots. Then today happened and we are getting more SNOW! That’s ok though. I’m in the mood for some spring-like food like this Peach Chicken I’m sharing today. I used canned peaches for now, but will be using fresh when they are in season.

I make a lot of chicken recipes on the blog. I’ve been a brand ambassador for the Chicken Farmers of Canada since 2014. Time sure flies. Not only have I been getting my fill of chicken recipes, but I’m also learning important information about chicken farming in Canada.
For example, I know how important it is for Canadians to know where there food is coming from. The Raised by a Canadian Farmer logo found on chicken packages in select grocery stores let’s us know that the product we are getting is high quality and held to nationally-set, high food safety and animal care standards. You can see what it looks like below. I found this chicken at our local Walmart Supercentre.
With this label, I know exactly what I’m serving my family: Canadian chicken that is not only a healthy source of protein, but also grain-fed, free of added hormones and steroids. Sadly, not every grocery store carries the logo. If it’s important to you, let your voice be heard by speaking to the store management and tell them you’d love to see it!
Peach Chicken
With this recipe, I wanted something simple that could be quickly thrown together in a matter of minutes. I also wanted it to be colourful and a little sweet which the addition of peach slices brings to the dish.
You may be thinking peaches and chicken? Yes, it works together. If you enjoy sweet and sour chicken, you’ll probably enjoy this easy meal.
The onions are sautéed to start to soften up a bit. Then, add in the cubed chicken breasts to cook. I used a can of sliced peaches in water. I was debating whether or not to use peaches in syrup, but thought it might be a tad too sweet. Plus, peaches in water is healthier and less sugary.
When you drain the peaches, save the liquid. You’ll be mixing it with cornstarch in order to thicken the sauce.
I recommend serving on a bed of rice to soak up the all the sweet sauce and make it a complete main dish. Dinner can be served in a matter of 25 minutes!

Peach Chicken
An easy dinner with cubed chicken breasts and sliced peaches. Perfectly sweet and delicious!
Ingredients
- 2 boneless, skinless chicken breasts, cubed
- 2 tbsp oil
- 1 onion, chopped
- 1 28oz sliced peaches in water
- 1 tbsp cornstarch
Instructions
- Drain peaches and save the liquid. Mix cornstarch with the peach liquid and set aside.
- Heat oil in frying pan over medium high heat. Add onions and sauté for 2 minutes. Add chicken and stir to combine. Cook for 8 to 10 minutes or until chicken is cooked through, stirring occasionally.
- Add peaches to pan and stir to combine. Pour liquid in the pan. Bring to a boil, stirring constantly. Reduce heat to medium low and simmer until liquid has thickened, about 5 minutes. Serve over a bed of rice.

Ahhhhhh Stacie you just brought back so many wonderful memories with this recipe. My Mom used to make us something similar once a month and it was one of my favorite dishes. Love the taste of peaches with chicken. And it’s good to know that that the chicken you used is trusted. We’ve just had a horrible outbreak of Listeriosis here in South Africa that killed more than 180 people. And the cause was imported meat by products from Brazil. Everyone is throwing away their frozen chickens and cold meats based on the safety warnings. It would have been so much better if we had something similar. At least we’d know that the chickens were home grown and safe.
