Brownie Bottom Cheesecake

This luscious recipe combines two of my favorite desserts: brownies and cheesecake. Together, they are a match made in heaven.

With only five ingredients, you’ll have this dessert whipped up for your family to enjoy in no time at all.

I’m a huge sucker for cheesecake anything. I’ll eat it any way you give it to me…within reason, of course. Brownies and cheesecake are like PB and jam. Yummy on their own, but absolute perfection together.

I made this cheesecake for my family and it didn’t even last an hour! I swear the guys just devoured it before I could even snag a piece. I did, don’t you worry, but I had to hide it in the fridge under some paper towel.

Brownie Bottom Cheesecake Ingredients

You’ll only need FIVE ingredients to whip up this beauty.

  • Brownie mix
  • Cream cheese
  • Eggs
  • Sugar
  • Vanilla

I used Betty Crocker Chocolate Chunk Brownie Mix in this recipe. I love the chocolate bits spread throughout for an extra decadent delight.

How to Make Brownie Bottom Cheesecake

Start by mixing the brownies from the package according to the directions on the box. You’ll likely need an egg, oil and water. Spread the brownie mixture on the bottom of a 9-inch springform pan that you’ve greased with cooking spray.

Bake for 30 minutes at 350F. I recommend placing the springform pan on top of a baking sheet just incase anything leaks.

At the 30 minute mark, your brownies should be cooked thoroughly and set in the pan. You can use a tester and it should come with just a few dry crumbs attached to it for the perfect brownie consistency.

It’s important to note that the brownie will not cook any longer once the cream cheese mixture is added to it. Bake the brownies as if you’d be baking them and eating them by itself.

The bake time may change depending on the brownie mix you choose. Check the box directions and see what it says to bake with a 9×9 pan and use that time. Most boxes are around 30 minutes.

Spread the cream cheese mixture on top of the baked brownie mixture. The brownie does not need to cool before adding the cheesecake mixture.

Reduce the heat to 325F and bake for another 50 minutes. The cheesecake should be set and starting to become golden on the edges. It will be jiggly in the pan.

Remove from the oven and let cool completely before releasing the springform pan. I let mine cool a few hours.

Drizzle with some chocolate ice cream sundae sauce or whipped cream, if you wish!

Can You Freeze Cheesecake

Yes, you can! Wrap it in either foil or plastic wrap first and keep it for up to 6 weeks in the freezer. Thaw before you serve.

Freezing cheesecake is a great way to always have dessert on hand if you have visitors or get a craving for sweets.

  1. Read the comments and haven’t seen the solution to brownie mix not thoroughly cooking?  Should I cook the brownies partially and then add the cream cheese mixture?

  2. I made this dessert today and I was SO DISAPPOINTED !. I made the dunkin hines brownie mix with three eggs (the cake like brownie) I poured the cheesecake batter on top and baked it for 30 minutes at 350 and then325 for 25 minutes because the top was jiggling. When I took it out of the oven, it looked GREAT so I let it cool and served it, When I sliced into it, the center WAS NOT DONE !!! It was chocolate liquid“` although the edges were cooked. I was SO UPSET and was thankful that I didn’t have guests over ! Right now it is back in a 325 oven and Im hoping I can salvage it. In the future, the brownie need to be baked and then add the cheesecake batter and cook again. DISAPPOINTED! Looking for a better recipe !

  3. Please edit directions, read comments after I made this and the brownie batter is completely liquid! Need to bake the brownie layer first! It’s a  lovely idea but please modify directions so others won’t have same failure and waste ingredients.

  4. This was a very simple recipe. It turned out to be DELICIOUS my partner and I love it. Def will be making it again.

  5. Jennifer Delgado says:

So I made n=mine in a glass baking dish and still did the water bath. I unfortunately didn’t read all the comments about partially cooking the brownies till after i had the whole thing in the oven LOL. So after the first 30 minutes I carefully removed it from the water bath and reduced the temp to 325 and cooked an additional 25-30 minutes. It all cooked just fine.

  6. I made this today for dessert!!! It was soooo easy to make, and so, so, so good!!!  I didn’t have a brownie mix on hand, so I just made a simple brownie recipe that I found on Pinterest and added chocolate chips to the recipe. This was such an easy dessert to make  And it was a crowd favourite!!! Definitely a recipe I’ll be marking again!!

  7. Can you double the recipe and make a bigger cheesecake

  8. Can you make this without a springform pan?

    1. I haven’t tried it without one yet so I’m not sure!

      1. The brownie only baked on the edges. Most of it was still completely raw. Also more brownie than cheesecake. I will keep trying to tweet this to make it work.

  9. Sheri Tyler says:

How do you make the chocolate sauce?

    1. I used an ice cream sundae sauce that I bought at the grocery store.

  10. Diane Coates says:

The brownie mixture wasn’t totally cooked even after I added 15 minutes to the baking time.  Should I have baked the brownie mixture before I added the cheesecake mixture?  The cake was delicious anyway…

  11. Katherine says:

Is it ok to use a 9 in square pan

  12. I wish I would have read the reviews before making this amazing cake.  I also have to agree that the brownie felt undercooked.  I would have baked the brownie about 8-10 min before putting the cream cheese mixture on top.  I will do that next time

  13. What if I only have 16 oz of cream cheese? Should that be alright or will it mess up the recipe? And to soften the cream cheese how long should I leave it out?

    1. 16 oz is fine. Leave the cream cheese to sit at room temperature for 30 minutes to 1 hour.

  14. Chelsea Johnson says:

What if I only have 16 oz of cream cheese? Should that be alright or will it mess up the recipe? And to soften the cream cheese how long should I leave it out?

  15. Mine turned out perfect. I did the 3 egg ” cake like” brownie option on the box mix. I kept it in the oven 10 minutes longer with the oven turned off. It was so eaay and soooo delicious!!!

  16. Brownie wasn’t done in center so i toke cheescake off the top and baked brownie longer. Next time I’ll bake brownie at least half way before pouring cheesecake on top

    1. I had the same problem. Brownie was still raw in the middle. Everyone liked it still, but the brownie should have been baked at least partially before adding the cream cheese mixture.

  17. If you bake this cook the brownie first or it will be raw

    1. Darlene Sutherland says:

Exactly what.happened to me too…very disappointing

    2. Darlene Sutherland says:

Exactly what happened to mine. Very disappointing. Make sure to cook brownie first. Then when would you add cream cheese and how long would you cook it with cream cheese on top?

  18. Lynne McConnell says:

This looked delicious. However, I found that the brownie was very undone. I salvaged it by turning it upside down and scraping the brownie into another pan, baking it some more, and then placing it on the cheesecake.

I agree that the brownie should be baked some before putting the cheesecake on top & baking it some more.

    It still was delicious

  19. Do we refrigerate before we eat this?
