I love an easy recipe and these Party Potatoes fit the bill to a tee. I might even dare say I like them better than mashed potatoes. To make them, it’s literally dumping all the ingredients into a bowl, mixing it up and then baking. You won’t find an easier potato side dish!

You don’t even need to buy potatoes. Well, the regular potatoes you find in the produce section, anyways. This simple side is made with frozen hash browns. Thaw those babies out in the fridge and you are good to go to make this recipe.

Matty loved them so much that he called his parents to come over to try them out. They really enjoyed them, too. I’m thinking the next time I can host a family gathering, this recipe is going on the menu. It’s perfect for Thanksgiving or Christmas dinner. No lumpy potatoes here!

    You don’t need any fancy ingredients either. You might even have a lot of these ingredients in your fridge, freezer and pantry.

    Here’s what you’ll need:

    • 2 lb bag of frozen hash browns – thaw them out in the fridge for a few hours before you use them in the recipe
    • Chopped onion
    • Melted butter
    • Shredded cheddar cheese – we like old cheddar in our house!
    • 1 can cream of chicken soup – don’t add any water. 
    • Sour cream 
    • Onion salt
    • Pepper
    • chopped fresh chives – you could also use chopped green onion if you don’t have chives

    How to Make

    You’ll make this recipe once and always remember it. It’s super easy! The printable recipe card is at the bottom of the post if you want to print it out for later.

    1. Start by preheating the oven to 350F. 
    2. Add all the ingredients to a large bowl and stir to combine. Spread the mixture in a 9×13 baking dish.
    3. Bake for 1 hour, uncovered.
    4. Turn the oven to broil on low. Broil for 1 minute or until the top starts to brown. Make sure to watch it because it will burn quickly! I like to do this so it has a nice golden top. You could skip this step if you want.
    5. Remove from oven and serve hot.

    If you have any leftover chives, you could add them to the top as well for extra garnish and flavor. Yum!

    Can I Make Ahead

    Yes! If you want to make it ahead, feel free. Prepare everything up until the point that the casserole goes into the oven. Make the night before if you need to and refrigerate. Then, pop it in the oven when you’re making dinner.

    Ingredients
     
     

    • 1 bag frozen diced hash browns 2lb/900g bag, thawed
    • 1 cup yellow onions chopped
    • ¼ cup melted butter
    • 1 cup cheddar cheese shredded
    • 1 can cream of chicken soup 10.5oz/284ml can
    • 2 cups sour cream
    • ½ tsp onion salt
    • ¼ tsp pepper
    • 1 tbsp fresh chives chopped

    Instructions

    • Preheat oven to 350°F.
    • Add all the ingredients to a large bowl and stir to combine. Spread in a 9×13 inch baking dish.
    • Bake for 1 hour.
    • Turn the oven to broil on low. Broil for 1 minute or until the top starts to brown. Keep an eye on it because it will burn easily!

    2. We are having a small plate, buffet type dinner for a party of 25 at Christmas this year. Have you tried making these in a muffin tin as you do in your muffin tin recipe? I like the idea of not peeling all those potatoes.

      1. No, I haven’t made this recipe, but I like the idea! I used frozen hashbrowns so there is no potatoes to peel. I’m with ya there! lol I think you’d need to add some eggs if you were doing this recipe in a muffin tin so that they stay together.

      1. Hi Jackie, Yes, you can make it in the crockpot. Spray the crockpot with cooking spray. Add the ingredients and cook for 5 to 6 hours on LOW heat or 3 to 4 hours on HIGH.

    5. Can something else be used besides cream of chicken to make it vegetarian?

    6. It was a hit at our birthday party! And my friend won’t eat anything with sour cream! Oops! Forgot to tell him!

    7. Made for a dinner party and everyone loved them, so delicious. Great as a left over too ..ate the one serving that was left for my lunch the next day! I would rate it 5 of 5 and will make it again
