    • When you’re buying cheddar cheese for this recipe, I recommend buying a block of cheese and then grating it. This is because grated cheese tends to contain starch that makes it harder to melt!
    • Make sure you fully coat the Brussels sprouts with bacon. Okay,I get that it’s tricky to coat the Brussels sprouts with bacon, but redistributing the bacon bits will make each portion more even.
    • Check that the sprouts are spread evenly on the pan. If you don’t do this, they won’t brown well or some will be undercooked and some will be burned.
    • If your cheese sauce is runny, don’t panic. Cheese sauce usually thickens as it bakes, because the sauce gradually absorbs into the sprouts. If it’s super wet, a small amount of cornstarch should thicken it up slightly.

    Just remember to let it cool to room temperature before ceiling the casserole dish with foil and placing it in the fridge.

    Ingredients
     
     

    • 4 cups brussels sprouts halved
    • 2 tbsp extra virgin olive oil
    • 1 package bacon 375g package, cooked and chopped
    • 1 cup heavy cream
    • 2 large eggs beaten
    • 1 tsp salt
    • 1 ½ tsp pepper
    • 1 ½ cup cheddar cheese shredded
    • 1 sprig rosemary minced
    • 1 tsp onion powder
    • 1 tsp garlic powder
    • 1 tsp paprika

    Instructions

    • Preheat oven to 400°F. Add Brussel Sprouts to a large bowl. Add olive oil and season with salt and pepper. Toss together to cover. Spread evenly on a baking sheet. Bake for 20 minutes.
    • Remove Brussels Sprouts from oven and sprinkle on the bacon. Set aside.
    • In a large bowl, mix together eggs, heavy cream, cheese, rosemary, onion powder, garlic powder, paprika, salt and pepper.
